Kerala Special Broccoli Potato Mezhukkupuratti | Broccoli Potato Stir Fry| Special Broccoli Urulakizhangu Thoran


Ingredients:-

  • Broccoli – 1 Head 
  • Potato – 2
  • Capsicum – ½ portion
  • Onion – 1 Medium size
  • Turmeric Powder – ¼ Teaspoon
  • Dried chilli flakes – ½ Teaspoon
  • Pepper Powder – ¼ Teaspoon
  • Oil as required
  • Salt to taste

Preparation:-

  • Cut Broccoli into small pieces
  • Cut onion, potato, capsicum into small pieces
  • Heat oil in a pan and add potato and sauté well
  • Add broccoli, capsicum, onion salt to taste and mix it well
  • Add turmeric powder, chilli flakes, pepper powder and sauté well
  • Pour 2 table spoon water and then close the pan and cook well, open in between and stir well to avoid burning
  • Switch off the stove
  • Tasty Broccoli Potato stir fry is ready to serve

Kerala Special Cabbage Vazhattiyathu | Cabbage Stir Fry| Special Cabbage Thoran


Ingredients:-

  • Cabbage – 2 Cup
  • Onion – ½ portion of a medium size
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – 1 ½ Teaspoon
  • Mustard Seeds – ½ Teaspoon
  • Cumin Seeds – ¼ Teaspoon
  • Urad dal - 1 Teaspoon
  • Besan Flour / Gram flour – 1 ½ Tablespoon 
  • Grated Coconut – ¼ Cup
  • Curry leaves as required
  • Oil as required
  • Salt to taste

Preparation:-

  • Cut cabbage into lengthy pieces
  • Cut onion into small pieces
  • Heat oil in a pan and splutter mustard seeds, add cumin seeds and urad dal
  • Add onion, curry leaves, salt to taste and saute well 
  • Add turmeric powder, chilli powder and continue sautéing 
  • Pour ¼ cup water into gram flour and mix it well
  • Pour gram flour mix into the pan and mix it well
  • Transfer cabbage into the pan and mix it well
  • Close the pan and cook well, open in between and stir well to avoid burning
  • Finally add grated coconut and switch off the stove
  • Tasty cabbage stir fry is ready to serve

Ingredients:-
  • Bitter Gourd – 1
  • Garlic – 2 Pods
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – 1 Teaspoon
  • Grated coconut – ¼ Cup
  • Vinegar – 1 Teaspoon
  • Curry Leaves
  • Mustard Seeds – ½ Teaspoon
  • Salt to taste
  • Oil as required

 

Preparation:-
  • Cut bitter gourd into small pieces
  • Cut Garlic into small pieces or crush
  • Heat oil in a pan and splutter mustard seeds
  • Add turmeric powder, chilli powder, garlic, curry leaves into the pan and sauté well
  • Transfer cut bitter gourd and salt into the pan and sauté well
  • Close the vessel and cook well
  • Add grated coconut and mix it well
  • Close the vessel and cook
  • Switch off the stove and pour vinegar and mix it well
  • Tasty bitter gourd stir fry is ready to serve

Ingredients:-
  • Brinjal – 1 Big
  • Turmeric Powder– ½ Teaspoon
  • Chilli Powder – 1 Teaspoon
  • Kashmiri Chilli Powder – 1 ½ Teaspoon
  • Coriander Powder – ½ Teaspoon
  • Garam masala – ½ Teaspoon
  • Curd - 3 Tablespoon
  • Salt to taste



Preparation:-
  • Take a bowl and add Turmeric Powder, Chilli Powder, Kashmiri Chilli Powder, coriander Powder, Garam Masala, salt to taste and Curd and mix it well to make a thick paste
  • Cut the Brinjal into small slices
  • Marinate the Brinjal with the masala and keep it aside for 10 min
  • Pour oil in a frying pan and fry the Brinjal both sides
  • Tasty Brinjal Fry is ready to serve
  • Serve it hot with rice

Ingredients:-
  • Ivy gourd / Kovakkai – 250 Gram
  • Onion – 1 Medium
  • Turmeric Powder – ¼ Teaspoon
  • Dried chilli flakes – 2 Tablespoon
  • Curry Leaves as needed
  • Salt to taste
  • Oil as required


Preparation:-
  • Cut ivy gourd and onion into small pieces
  • Take a bowl and add ivy Gourd/kovakkai, onion, curry leaves, salt to taste and mix it well
  • Heat oil in a pan and add dried chilli flakes, turmeric powder and sauté well
  • Transfer cut ivy gourd into the pan and sauté well
  • Close the vessel and cook well
  • Mix it well continuously
  • Switch off the stove once it is dry
  • Tasty ivy gourdKovakkai stir fry is ready to serve

Preparation:-
  • Heat oil in a pan, add onion, brinjal, green chilli, turmeric powder, salt as required, curry leaves into the pan and sauté well  
  • Add required water and cook the vegetables by closing the vessel using a lid
  • Switch off the stove and mix it well to make it dry
  • Tasty Brinjal stir Fry / Vazhuthananga Mezhukkupuratti is ready to serve

  • Tomato – 5 Medium
  • Green chilli - 2

Kadala Masala | Brown Chickpea Roast?



Ingredients:-
  • Brown Chickpea – ½ Cup Soaked
  • Onion – 1 Medium size
  • Ginger - 1 Inch crushed
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – 1 Teaspoon
  • Coriander Powder – 3 Teaspoon
  • Tomato – 1 big size
  • Chicken Masala – 1 Teaspoon
  • Pepper Powder – ½ Teaspoon
  • Garam Masala – ¼ Teaspoon
  • Raw coconut oil as needed
  • Curry leaves as needed
  • Salt to taste
  • Water as needed

Preparation:-
  • Take a cooker and cook brown chickpea
  • Heat a pan and pour 1 to 2 tablespoon coconut oil.
  • Sauté onion by adding a little salt
  • Add crushed ginger and curry leaves and continue sautéing
  • Add ½ Teaspoon Turmeric powder, 1 Teaspoon chilli powder, 2 Teaspoon coriander powder and sauté well
  • Add sliced tomato and sauté
  • Transfer cooked brown chickpea into the pan and mix it well
  • Add 1 Teaspoon chicken Masala, 1 Teaspoon Coriander Powder, ½ Teaspoon pepper powder and sauté well
  • Taste salt and add if required
  • Add garam masala and curry leaves into the pan and continue sautéing
  • Pour raw coconut oil and switch off the stove

Ingredients:-
  • Toor Dhal – ¼ Cup soaked for 2 hours
  • Snake gourd (Padavalam) – 1 Medium size cut into small pieces
  • Grated Coconut – 4 Tablespoon
  • Small Onion/Shallot – 2 Pods
  • Green chilli – 2
  • Garlic – 2 Pods
  • Turmeric Powder – ¼ Teaspoon
  • Mustard Seeds – ½ Teaspoon
  • Curry leaves as needed
  • Oil as needed
  • Salt to taste


Preparation:-
  • Take a cooker and add soaked dhal, snake gourd and required water and cook well
  • Crush grated coconut, Small onion, garlic, green chilli
  • Heat oil in a pan and splutter mustard seeds and then add curry leaves.
  • Transfer cooked Dhal and Snake Gourd, salt as required, turmeric powder, crushed coconut and mix it well
  • Close the pan and cook for 2 min
  • Mix it well and switch off the stove
  • Tasty Padavalam parippu thoran is ready to serve

Ingredients:-
  • Chinese Potato (Koorka) – 300 Gram
  • Shallot (Small Onion) – 75 Gram
  • Garlic – 6 Pods
  • Dried Red Chilli Powder – 1 Tablespoon
  • Turmeric Powder – ½ Teaspoon
  • Curry leaves as needed
  • Salt as needed
  • Coconut Oil as needed


Preparation:-
  • Let’s clean Chinese potato first.
  • Take Chinese potato/koorka into a cloth bag and by using your hand press and roll it
  • Crush both shallot and garlic
  • Take a cooker and add, Chinese potato/Koorka, crushed shallot/small onion, garlic, curry leaves, salt as needed, turmeric powder, dried red chilli powder and mix it well
  • Pour required water to cook Chinese potato/Koorka
  • Allow it to evaporate complete water content
  • Switch off the stove and add raw coconut oil and mix it well
  • Tasty Chinese potato /Koorka mezhukkupuratti is ready to serve

Ingredients:-
  • Potato – 3 Medium Size
  • Fresh Cowpea Beans– 10 to 12 / 1 Cup
  • Shallot Crushed – 10 Pods
  • Garlic Crushed – 4 Pods
  • Turmeric Powder – ¼ Tea Spoon
  • Dried Chilli flakes – 1 ½ Tea Spoon
  • Salt as needed
  • Curry Leaves as needed
  • Coconut Oil as needed

 

Preparation:-
  • Heat oil in a pan, add shallot into it and sauté well.
  • Add garlic and continue sautéing
  • Add potato into the pan and mix it well
  • Add Cowpea Beans and continue sautéing
  • Add salt and mix it well
  • Add turmeric powder, dried red chilli flakes and mix it well
  • Add Curry leaves into the pan
  • Close the pan using a lid and cook for 5 min. In between make sure you open the lid and stir well.
  • Switch off the stove and transfer it into a serving bowl

Ingredients:- 
  • Elephant foot Yam (Chena) – 500 gm
  • Kashmiri Chilli Powder – ¾ Table Spoon
  • Turmeric Powder – ¼ Tea Spoon
  • Cumin seeds Powder – ¼ Tea spoon
  • Salt as needed
  • Curry leaves as needed


Preparation:-
  • Take a cooker and add elephant foot Yam (Chena), salt, turmeric Powder, and required water and cook for two whistle. Make sure you don’t overcook Yam/Chena
  • Heat oil in a pan, add chilli powder, curry leaves into it and sauté well in a low flame
  • Transfer the cooked Yam/Chena into the pan and mix it well
  • Add cumin seeds powder and few more curry leaves into the pan and mix
  • Keep the flame in medium and sauté well for 3 to 4 min.
  • Switch off the stove once it become dry
  • Tasty “Chena Mezhukkupuratti” is ready to serve
