Muringayila or drumstick leaves are one of the healthy leaves you should eat daily to boost your immune system. Drumstick leaves have got so many health benefits. Muringayila has calcium, protein, iron, and amino acids, which help your body heal and build muscle. Here I am showing a stir Fry prepared using drumstick leaves. It may he slight bitter taste but considering the health benefits of this leaves you must include this thoran / Stir fry in your diet very frequently.  

Murigayila Thoran | Drumstick Leaves Stir Fry | Healthy Thoran Recipe

Ingredients:-

  • Drum stick leaves- 2 Cups
  • Grated Coconut- 2 Table Spoon
  • Green Chilli- 1
  • Garlic -4
  • Turmeric -1/4 Tsp
  • Chilli Powder – 1/4 Tsp
  • Mustard Seeds – ½ Teaspoon
  • Salt to taste
  • Oil as required


Preparation:-

  • Cut drum stick leaves into small pieces
  • Add salt, turmeric powder, red chilli powder, coconut, green chilli and garlic and mix well
  • Heat oil in a pan and splutter mustard seeds
  • Add drumstick leaves into it and mix and cover
  • Close the vessel and cook well
  • Once it cook sauté for some time and switch off the stove
  • Tasty Muringayila Thoran / Drumstick Leaves Stir Fry is ready to serve

Pachadi is one of the mandatory dish in Onam and Vishu sadya. Pachadi is prepared using different vegetables like pumpkin, carrot, cabbage, beetroot etc. Pachadi is very healthy because it has only two main ingredients, one vegetable and curd.  Here I am showing you how to prepare pachadi using Red Spinach/Cheera which is a variety pachadi in sadya. 

Sadya Special Cheera Pachadi | Red Spinach Pachadi

Ingredients:-

  • Red Spinach – 1 Bundle
  • Grated Coconut – ½ Cup
  • Curd – ½ Cup
  • Green chilli –2
  • Salt to taste
  • Mustard Seeds 
  • Dry red chilli – 2
  • Curry leaves as required
  • Salt to taste

Preparation:-

  • Cut red spinach 
  • Take a pan and add red spinach, salt to taste and mix it well. Switch on the stove.
  • Close the pan using a lid and mix it in between.
  • Take a mixer Jar and add grated coconut, ¾ portion of curd, ½ portion of Mustard seeds, green chilli and grind it well
  • Transfer cooked red spinach into a vessel and add ground coconut and curd mixture into that and mix it well
  • Add left over curd and mix it again
  • Heat oil in a pan and splutter mustard seeds. Add dried red chilli, curry leaves into the pan
  • Transfer spluttered mustard seeds into the pachadi
  • Tasty red spinach Pachadi is ready serve.

Cheera Sambar | Red Spinach Sambar



Ingredients:-
  • Toor dhal – ½ Cup Soaked
  • Red spinach – 2 Cup
  • Green chilli – 1
  • Tomato – 1 Medium Size
  • Turmeric Powder – ¼ Teaspoon
  • Chilli powder – 2 Teaspoon
  • Coriander Powder – 2 Teaspoon
  • Sambar powder – 2 Teaspoon
  • Tamarind water – 1 gooseberry size squeezed
  • Asafoetida – A Pinch
  • Fenugreek powder – A Pinch
  • Jaggery a small piece
  • Ghee – ½ Teaspoon
  • Onion – ¼ portion of a medium size
  • Dried red chilli - 2
  • Salt as required
  • Water as required
  • Curry leaves as required

 

Preparation:-
  • Cook toor dal in a cooker by adding required water
  • Take a mud pot and add cooked dal, red spinach, green chilli, tomato, salt to taste, turmeric powder, chilli powder, coriander powder, sambar powder, curry leaves and mix it well
  • Add required water and cook well by closing the mud pot
  • Pour tamarind water into the pot
  • Add asafoetida powder, fenugreek powder into the sambar and allow it to boil
  • Add a small piece of jaggery and a ghee into it and then switch off the stove
  • Heat a pan and pour required oil. Splutter the mustard seeds and then add onion, dried red chilli and curry leaves and sauté well. Transfer the spluttered mustard into the sambar.
  • Tasty cheera sambar  is ready to serve

Spinach Rice (Palak Rice) with Carrot Raita



Spinach Rice(Palak Rice)


Ingredients
Basmati Rice  - 2 Cup
Spinach   - 2 Cup
Onion   - 1 Large
Green Chilli  - 2
Ginger Garlic paste – 1 Tbls
Cinnamon – 1 large
Cloves – 4 to 6
Bay leaves – 1 or 2
Cardamon  - 3
Coriander leaves
Salt
Water

Preparation
  • Cook rice and keep it aside (I usually add a little bit of salt while cooking).
  • Blanch the spinach in boiling water for 10 - 12 minutes.
  • Grind the spinach into a smooth paste.
  • Heat oil in a pan. Add Cinnamon, Cloves, Cardamom and Bay leaves and saute it.
  • Add onion into it and saute well . Add the remaing salt into it.
  • Add ginger garlic paste and saute well till the onion became translucent.
  • Then add the spinach paste and saute well.
  • Once it became thick and dry, add the cooked rice into it and mix well.
  • Add Coriander leaves for garnishing.


Carrot Raita


Ingredients
Carrot  - 1 cup(Grated)
Green chilli  - 3 (Chopped)
Yogurt     - 1 1/2 Cup
Salt
Curry leaves

Preparation

  • Take Carrot,Green chilli and Salt in bowl.Mix it well
  • Then add Yogurt and curry leaves and mix again.
  • Serve it with Spinach rice, Pulao, Ghee rice or Biriyani.
