Pavakka Manga Curry | Bitter Gourd Mango Curry | Kaypakka Curry | Manga Curry


Ingredients:- 

  • Bitter gourd– 1
  • Raw Mango- 1
  • Tomato – ½ Portion
  • Green Chilli – 2
  • Curry Leaves as needed
  • Salt to taste
  • Turmeric ½ Teaspoon
  • Chilli Powder – 2 Teaspoon
  • Grated Coconut – ½ Cup
  • Mustard Seeds
  • Oil as needed

Preparation:-

  • Cut and clean mango and bitter gourd 
  • Cook bitter gourd and raw mango by adding salt turmeric chilli powder and curry leaves
  • Grind coconut and make a thick paste
  • Once it is cooked add coconut ground paste 
  • Splutter mustard seeds. If you want you can add dry red chilli also
  • Transfer spluttered mustard into the curry
  • Tasty Pavakka Manga Curry / Bitter Gourd Mango Curry is ready to serve

Mango Pola| Iftar Nombuthura Special Mango Pola


Ingredients:-
  • Mango Pulp– 1 Cup
  • Egg – 3
  • All-purpose flour – 1 Cup
  • Sugar – 1/3 Cup
  • Vanilla essence – ¼ Teaspoon
  • Baking Soda – A Pinch
  • Salt to taste
  • Ghee as required
  • Cherry as required
  • Mango pieces as required

 

Preparation:-
  • Grind mango using a mixer jar and make thick pulp
  • Add eggs, sugar, and vanilla essence into the jar and grind it well
  • Transfer the mixture into a bowl and then add all-purpose flour little by little and mix it well using a spatula
  • Add baking soda and salt and mix it well again
  • Take a non-stick pan and keep it over Dosa Tawa. Apply ghee over the non-stick pan.
  • Transfer mango mixture into the pan and spread it evenly
  • Close the pan using a lid and cook. After 4 to 5 min decorate the mango pola using cherry, cut mangoes etc.
  • Close it again and cook well for 10 to 12 min.
  • Transfer the pola into a plate
  • Tasty Mango pola is ready to serve

Kerala Sadya Special Mambazha Payasam | Mango Payasam 

Ingredients:-
  • Mango – 2 Medium Size
    • 1-      Cut into small pieces
    • 2-      Grind to make a thick paste
  • Milk – ½ Litre
  • Soaked Basmati rice - 2 Table spoon
  • (Grind it by adding 1 table spoon water)
  • Sugar – 5 Table Spoon
  • Cardamom Powder - 1 Tea Spoon
  • Cashew Nuts as needed
  • Raisins as needed
  • Condensed milk as required
  • Ghee as required

 
Preparation:-
  • Take a vessel, add ground basmati rice and ½ Cup water and cook
  • Pour milk into the vessel and boil. Make sure you stir continuously
  • Add sugar and stir well until it melts
  • Add ground mango into the milk and mix it well
  • Add cut mangoes into the milk stir well
  • Pour condensed milk, cardamom powder into the payasam and mix it well
  • Switch off the stove once it reaches the required consistency
  • Take a pan and heat 1 to 1 ½ table spoon ghee. Fry cashew nuts and raisins.
  • Switch off the stove and transfer cashew and raisins into the Payasam
  • Manga/Mango Payasam is ready to serve

Ingredients:-
  • Sardine – 250 Gram
  • Raw mango – ½ portion of a big mango
  • Grated Coconut – ½ Cup
  • Chilli Powder- 2 Teaspoon
  • Turmeric Powder- ½ Teaspoon
  • Shallot – 20 Pods sliced
  • Ginger – 1 Inch sliced
  • Garlic – 6 to 7 pods
  • Cumin seeds – ¼ Teaspoon
  • Mustard seeds – ½ Teaspoon
  • Fenugreek seeds – ¼ Teaspoon
  • Salt as required
  • Curry leaves as required
  • Oil as required
  • Water as required


Preparation:-
  • Grind Coconut, chili powder, turmeric powder by adding required water and make fine paste
  • Heat coconut in a clay pot and splutter mustard seeds and then add Fenugreek seeds.
  • Add shallot, ginger, garlic into the clay pot and sauté well
  • Transfer coconut paste, salt to taste, required water and allow it to boil
  • Transfer cleaned sardine into the pot along with few curry leaves and cook well
  • Tasty mathi Curry is ready to serve

Ingredients:-
  • Raw mango – 1
  • Sugar – 5 to 6 Table spoon
  • Mint leaf as required
  • Green chilli - Small Piece
  • Black Khus khus (Soaked in water) – ½ Teaspoon
  • Ice Cubes as required

 

Preparation:-
  • Cut mango into small pieces
  • Take a mixer and add mango, green chilli, mint leaf, sugar, ice cubes, and cold water and grind it well
  • Filter the juice and pour into the serving glass
  • Add Khus khus on top of the juice and Raw Mango juice is ready to serve

Ingredients:-

  • Mango – 5 Medium size
  • Green Chilli – 4
  • Turmeric Powder – ¼ Tea Spoon
  • Chili Powder – ½ Tea Spoon
  • Grated coconut – 1 Cup
  • Cumin seeds – ¼ Tea Spoon
  • Curd – ¼ Litre
  • Dried Red Chilli – 2
  • Mustard Seeds As required
  • Fenugreek Seeds – ¼ Tea Spoon
  • Jaggery grated – Small piece
  • Curry leave as required
  • Salt as required

 

Preparation:-
  • Let’s clean and peel the mangoes first
  • Take a clay pot and add mangoes, Salt to taste, Turmeric Powder, Chilli Powder, Green Chilli, Curry leaves and a cup of water and cook the mangoes. Once it starts boiling close the clay pot using a lid
  • Take a mixer jar and grind grated coconut by adding cumin seeds and ½ portion of curd
  • Transfer the ground coconut into the mango and mix it well.
  • Add curry leaves and once it starts boiling add jaggery
  • Switch off the stove and pour balance curd into the curry and mix it well
  • Heat a pan and pour required oil. Splutter the mustard seeds and then add fenugreek seeds, dried red chilli and curry leaves. Transfer the spluttered mustard into the curry

Ingredients:-

  • Mango – 1 Medium Size
  • Banana Robust – 2 Medium Size
  • Honey – 2 Table Spoon
  • Yogurt – 1 Cup
  • Ice Cubes – 5 to 6

Preparation:-
  • Take a juice jar and blend Mango, Banana, Honey, Yogurt and ice cubes well.  Make sure you use ripened and sweet Mango and Banana for perfect taste.
  • You may add additional honey if you would like to have more sweet
  • Pour tasty “Mango Banana Yogurt Smoothie” into a serving glass

Mango Pickle | Kerala Manga Achaar

How to Prepare Pacha Maanga Achar/Kerala Special Raw Mango Pickle?


Mango Pickle | Kerala Manga Achaar 



Ingredients:-
  • Mango –  ½ Kg
  • Garlic – 10 to 12 pods
  • Chilli Powder – ¼ Cup
  • Asafoetida – Small piece
  • Mustard seeds – ¼ Tsp
  • Fenugreek - ¼ Tsp
  • Vinegar – ¼ Cup
  • Curry leave as needed
  • Salt to taste
  • Gingelly oil (Nallenna) as needed


Preparation:-
  • First cut the mango into small pieces to make the pickle
  • Add salt into the cut mango and mix it well
  • Keep it aside for 2 hours. If not urgent you may keep it for a day or two as well
  • Take a kadai and add mustard seeds, fenugreek, asafoetida and sauté well. Grind the same using a mixer to make powder
  • Take a pan and add Gingelly oil (Nallenna) and splutter the mustard.
  • Add curry leaves and then garlic into the pan and sauté well
  • Add chilli powder and continue sautéing, you may add extra oil if you feel that the mixture is too dry
  • Now add the ground mustard seeds, fenugreek, asafoetida powder and sauté
  • Switch off the stove and add vinegar into the mixture. If you need more gravy then add water into it and boil
  • Add mango into the mixture and mix it well
  • Transfer the pickle into a bottle and pour little Gingelly oil (Nallenna) on top of it
  • Tasty Mango pickle is ready

Ingredients:-
  • Mango – 3 Sliced (1 Cup)
  • Turmeric Powder – ¾ Tsp
  • Green Chilli – 4
  • Onion – ½ sliced
  • Grated coconut – ½ Cup
  • Cumin seeds – ½ Tsp
  • Dried red chilli - 2
  • Mustard seeds as needed
  • Fenugreek - ¼ Tsp
  • Curry leave as needed
  • Salt to taste
  • Oil as needed


Preparation:- 
  • Take a clay pot and add sliced mango, Onion, Green Chilli, Curry leaves, Salt, Turmeric Powder and pour little water and cook well by closing it using a lid
  • Take a mixer jar and add grated coconut, Cumin seeds, water and grind it to make a thick paste
  • Transfer the ground coconut mix into the cooked Mango and mix it well. Pour required water if you need more gravy
  • Heat a pan and add oil into it. Splutter the mustard seeds, add dried red chilli, fenugreek, curry leaves into it and then transfer the spluttered mustard into the curry
  • Tasty Pacha maanga curry is ready to serve with rice!!!
