Dates Chappathi
Ingredients:-

  • Dates – 15 (Crushed)
  • Wheat flour (Atta) – 1 Cup
  • Ghee as required
  • Salt as required

Eenthappazham Chappathi

Preparation:-
  • Add wheat flour in a mixing bowl
  • Add water gradually and knead into a soft dough
  • Makes medium balls of the dough
  • Roll them into a circle
  • Add a portion of the dates paste in the centre
  • Seal it and round it
  • Roll them again
  • Heat a pan and cook the chapathi. Apply ghee on both sides
  • Dates chapathi is ready to serve

Ingredients:-
  • Cinnamon Stick – 1 Inch
  • Cloves - 1
  • Tea Powder – ½ Teaspoon
  • Sugar as needed
  • Water – 2 Cup
  • Mint leaf - 2


Preparation:-
  • Boil 2 cup water in a vessel
  • When it starts boiling add sugar, cinnamon stick and cloves and allow it to boil
  • Add tea powder and boil
  • Switch off the stove and filter the tea
  • Tasty Cinnamon Tea is ready to serve. Serve it hot

Ingredients:-
  • Wheat floor – 1 ½ Cup
  • Grated Coconut – ¾ Cup
  • Grated Jaggery – ½ Cup
  • Cardamom Powder – 8 pods crushed
  • Cumin Powder – ¼ Teaspoon
  • Ginger Powder – 1 Pinch
  • Ghee – ½ table spoon
  • Salt – 1 Pinch
  • Water as required

 

Preparation:-
  • Take wheat floor in bowl and add salt into it and mix it well
  •  Pour ghee and mix it again
  • Pour water little by little and mix it well until you get the required consistency
  • Take grated coconut, grated jaggery, cardamom powder, cumin powder, ginger powder in a bowl and mix it well
  • Take a banana leaf and add required batter and flatten it over the leaf. Add required coconut mixture on top of it and fold it
  • Taken an idly vessel with required water and steam Ada for 15 to 20 min
  • Tasty gothambu Ilayada is ready to serve

Ingredients:-
  • Ginger – ½ Inch
  • Cinnamon Stick – ¼ Inch
  • Cloves – 2
  • Whole Pepper - 3
  • Cardamom – 2
  • Sugar as required
  • Tea Powder as required
  • Water - 1 Cup
  • Milk - 1 Cup

 

Preparation:-
  • Crush ginger, cinnamon, cloves, whole pepper, cardamom and make a thick paste
  • Boil 1 cup water and add masala into it
  • Add required tea powder and allow it to boil
  • Pour 1 cup milk and required sugar for the tea
  • Switch off the stove once it starts boiling
  • Tasty special masala chai is ready to serve

Ingredients:-
  • Banana (Njali Poovan) – 5
  • Coconut Milk – ¾ Cup
  • Shallot – ¼ Cup
  • Sugar – 5 Tablespoon
  • Ginger extract - 1 Teaspoon
  • Lemon Juice - 1 Teaspoon
  • Dry Fruits as required
  • Beaten Rice to serve

 

Preparation:-
  • Take a bowl and mix shallot and sugar well
  • Smash Banana
  • Add shallot sugar mixture into banana and mix it well
  •  Pour ginger extract and lemon juice and mix it again
  • Pour coconut milk into the mixture and mix it well
  • Tasty Kochikoya is ready to serve
  • You may serve by adding kochikoya over the beaten rice or pour kochikoya in a glass and then add beaten rice on top of it.

Ingredients:-
  • Wheat flour – 1 ½ Cup
  • Water – ¾ Cup
  • Potato – 1 Medium
  • Onion – 1 Medium
  • Egg – 3
  • Chilli Powder – 1 Teaspoon
  • Turmeric Powder – ¼ Teaspoon
  • Coriander Powder – 1 Teaspoon
  • Garam masala - ¼ Teaspoon
  • Pepper Powder – ½ Teaspoon
  • Ghee as required
  • Oil as required
  • Curry leaves as required
  • Salt to taste



Preparation:-
  • Take wheat flour in a vessel. Add salt to taste and pour ¾ Cup water and mix it well to make chapati dough
  • Take a bowl and smash cooked potato and then add chopped onion and mix it well
  • Add 3 eggs into the bowl, salt to taste, turmeric powder, chilli powder, coriander powder, garam masala, pepper powder and mix it well
  • Heat oil in a pan and pour egg mixture into it and mix it well to make it like an egg bhurgi
  • Take chapati dough and make balls.
  • Take one of the balls and place it on a flat surface dusted with wheat flour.  Using a rolling pin, roll the ball to a circular shape.
  • Add egg bhurji on top of the chapatti and make ball again.
  • Using a rolling pin, roll the egg stuffed ball to a circular shape again.
  • Heat a dosa tawa and keep one Paratha at a time and cook both sides by applying ghee on top of it
  • Tasty egg stuffed Paratha is ready to serve

Ingredients:-
  • Semolina / Rava – 1 Cup
  • Onion Chopped– ½ Cup
  • Green Chilli - 2
  • Ginger – 1 Teaspoon
  • Curd – ¼ Cup
  • Salt as required
  • Curry leaves as required
  • Oil as required
  • Water – 1 Cup


Preparation:-
  • Take semolina in bowl, add curd into it and mix it well
  •  Add salt, onion, green chilli, ginger, curry leaves into it and mix it again
  • Pour 1 Cup water little by little and mix it well
  • Keep the mixture aside for 10 to 15 min
  • Apply oil or water on your hand and take a small portion of dough to make vada shape. Fry both sides until golden brown
  • Tasty Rava Vada is ready to serve

  • Wheat flour – 1 Cup
  • Water – 1 Cup
  • Salt as required
  • Oil as required


Preparation:-
  • Boil water in a pan and add salt into it
  • Pour little oil while boiling the water
  • Keep the flame low and add wheat flour into the boiled water and mix it well
  • Switch off the stove and keep it aside to cool down
  • Knead the dough well
  • Make medium size balls to make the Pathiri
  • Now take one of the balls and place it on a flat surface dusted with wheat flour.  Using a rolling pin, roll the ball to a circular shape. Cut it using a sharp rounded vessel to get the exact circle shape
  • Heat a dosa tawa and keep one Pathiri at a time and cook both sides
  • Tasty Gothambu Pathiri is ready to serve

Ingredients:-
  • Idly – 6
  • Onion Sliced -1 medium size
  • Ginger Chopped – ¼ Teaspoon
  • Green Chilli Chopped - 2
  • Curry leaves as required
  • Turmeric Powder – ¼ Teaspoon
  • Mustard Seeds – ½ Teaspoon
  • Dried Red Chilli – 2
  • Urad Dal – ¾ Teaspoon
  • Salt as needed
  • Oil or Ghee as needed


Preparation:-
  • Crush idli as per the size you would like to make Upma
  • Heat ghee in a pan and splutter mustard seeds
  • Add dried red chilli and urad dal and sauté well
  • Add onion, green chilli, ginger, curry leaves, turmeric powder, salt to taste and continue sautéing 
  • Transfer crushed idli into the pan and mix it well
  • Tasty Idli Upma is ready to serve

Ingredients:-
  • Rice flour – 1 Cup
  • Shallot – 20 Pods
  • Grated Coconut – ¾ Cup
  • Mustard Seeds –½ Teaspoon
  • Dry Red Chilli - 4
  • Salt as needed
  • Curry Leaves as required
  • Ghee as needed
  • Oil as needed
  • Water – 1 Cup

Preparation:-
  • Take 1 Cup water in a vessel and add salt into it
  • Add rice flour into it and mix it well
  • Switch on the stove and keep it in high flame. Stir the mixture continuously.
  • Once it become thick switch off the stove and allow it to cool
  • Add ghee into the pan and knead it well.
  • Take small portion of the dough and make small balls
  • Steam rice balls until it cook
  • Heat Oil in a pan. Splutter mustard seeds. Add dried red chilli, Curry leaves and shallot and sauté well
  • Transfer steamed rice balls into the pan and mix it well
  • Finally add grated coconut and then switch off the stove
  • Tasty Kozhukkatta/Rice balls is ready to serve

  • Sweet Corn to Grind– ½ Cup
  • Sweet Corn Whole – ¼ Cup
  • Carrot – ¼ Cup
  • Beans – ¼ Cup
  • Spring Onion - !/4 Cup
  • Garlic – 4 Pods (¾ to 1 tablespoon)
  • Pepper Powder – ½ Teaspoon
  • Corn Flour – 1 Tablespoon
  • Lemon Juice – ¼ Teaspoon
  • Sugar – ¼ Teaspoon
  • Salt as required
  • Butter as required


Preparation:-
  • Take a mixer jar and grind sweet corn and make thick paste by adding a little water
  • Take corn flour in a bowl and mix it with ¼ cup water
  • Heat butter in a pan and add carrot, beans, sweet corn, garlic into it and sauté well
  • Add spring onion and continue sautéing
  • Transfer ground sweet corn into the pan and mix it well
  • Add two cup water and cook for 5 min by closing the pan
  •  Transfer corn flour into the pan and mix it well
  • Add required salt, sugar, pepper powder into the soup and mix it again
  • Finally add few spring onion and lemon juice and then switch off the stove
  • Tasty Sweet Corn soup is ready to serve

Ingredients:-
  • Semolina/Rava – 2 Cup
  • Grated Coconut as required
  • Salt as required
  • Oil – 1 Teaspoon
  • Water - 4 Cup (Double quantity of Rava)

 
Preparation:-
  • Boil 4 cup water, add salt as required and 1 teaspoon oil
  • Transfer semolina into the boiled water and mix it continuously at high flame
  • Switch off the stove once semolina absorbs entire water and close the pan using a lid.
  • Open the lid and mix it well. Allow the mixture to cool down
  • Fill the dough into the idiyappam mould
  • Take idli making vessel and add grated coconut first and then squeeze rava idiyappam mixture
  • Keep the filled vessel inside the cooker and cook for 3 min
  • Tasty Rava idiyappam is ready to serve

  • Beaten Rice – ½ Cup

  • Banana (Nendran) - 1
  • Sugar – 1/3 Cup

Preparation:-
  • Cut banana into small pieces
  • Take a pan a boil milk
  • Add beaten rice into the milk and cook well
  • Add cut banana and sugar into the milk and cook well
  • Add cardamom powder into the pan and mix it well and then switch off the stove
  • Take a pan and heat 1 to 1 ½ table spoon ghee. Fry cashew nuts and raisins.
  • Transfer cashew and raisins into the Aval Paal Vaazhakka. Close the pan for some time.

Ingredients for Chicken Preparation:-
  • Chicken – 350 Gram
  • Pepper – ½ Teaspoon
  • Salt to taste

Ingredients for Chicken Masala Preparation:-
  • Onion – 1 Big
  • Green chilli – 2 sliced
  • Ginger – 1 Inch
  • Garlic – 10 Pods
  • Turmeric Powder – ¼ Teaspoon
  • Chilli Powder – 1 Teaspoon
  • Coriander Powder - – 1 Teaspoon
  • Pepper Powder – ¼ Teaspoon
  • Garam Masala – ¼ Teaspoon
  • Salt to taste

Ingredients for Dosa
  • All-purpose flour – 1 ½ Cup
  • Salt to taste
  • Pepper powder – ¼ Teaspoon
  • Egg - 1

Ingredients for Egg batter
  • Egg – 4
  • Salt to taste
  • Pepper Powder- ¼ Teaspoon



Preparation:-
  • Take a cooker and cook chicken by adding salt and pepper powder
  • Separate cooked meat from chicken bone
  • Heat oil in a pan and sauté chopped onion green chilli, ginger, garlic by adding little salt
  • Add turmeric powder, chilli powder, coriander powder, pepper powder into the pan and continue sautéing
  • Add chicken in to the pan and mix it well
  • Add garam masala and mix it again
  • Take a bowl and mix all-purpose flour, salt to taste, pepper powder, egg and mix it well
  • Pour required water and make dosa batter
  • Heat a tawa and apply oil on top of it. Pour one big spoon batter over the tawa and spread it to make Dosa.
  • Take a small bowl and mix 4 eggs, salt to taste and pepper powder
  • Take a non-stick pan and keep it over Dosa Tawa. Apply ghee over the non-stick pan.
  • Pour a little egg batter first, then keep a dosa on top of it and then again pour egg batter. Add chicken mixture over the batter and then keep dosa on top of it. Continue the same to make multiple layers
  • After 10 to 12 min take another pan and flip the chatti pathiri and cook both side.
  • Tasty Chatti Pathiri is ready to serve

Ingredients:-
  • Raw Rice (Soaked for 4 hours) – 2 Cup
  • Grated Coconut – 1 Cup
  • Coconut water – ½ Cup
  • Cooked Rice – 3 Tablespoon
  • Sugar – 1 to 2 Table spoon
  • Salt as required

 

Preparation:-
  • Take a mixer and soaked raw rice, grated coconut, cooked rice, coconut water, sugar, required plain water and grind it well
  • Transfer the batter into a vessel and add salt over the batter and keep it over night (6 to 8 hours) for fermentation
  • After 8 hours take out the batter and stir it well.
  • Heat a pan suitable to make appam (Appam Chatti) and pour a spoon full batter and spread it over. Close the vessel using lid for 2 to 3 min.
  • Tasty and soft vellayappam is ready serve
