Homemade Chicken Cutlet | Iftar/Nombuthura special Chicken Cutlet



Ingredients:-

  • Chicken – 300 gm
  • Potato Boiled– 1
  • Onion – 2 finely chopped
  • Green Chilli - 2
  • Garlic – 2 Pods
  • Ginger – 1 Inch
  • Pepper powder – 2 Tsp
  • Egg white -1
  • Cornflour – 2 Tsp
  • Bread crumbs – ¼ Cup
  • Coriander leaves as needed
  • Salt to taste


Preparation:-
  • Take a cooker, add chicken, salt and pepper powder into it. Pour required water and cook the chicken. 
  • Once chicken is cooked well separate the meat from the chicken born.
  • Crush the chicken using a mixer jar
  • Take a pan and pour little oil, add ginger, garlic and green chilli paste into the pan and sauté well
  • Add chopped onion, salt into it and continue sautéing
  • Add crushed chicken into the pan and mix it well
  • Add pepper powder and mix it again
  • Transfer smashed potato into the pan and mix it well
  • Switch off the stove and then add coriander leaves into the mixture and mix it again
  • Transfer the mixture into to a flat vessel to cool it down
  • Take handful of mixture and make small balls, then flatten the balls to make cutlet shape
  • Beat the egg using a spoon or knife
  • Take cornflour into a small bowl and pour little water and mix well. Pour the Cornflour mixture into the egg white and mix it well
  • Dip the flattened cutlet one by one into the egg white first and then coat the bread crumbs over the cutlet and keep it aside
  • Heat a pan and pour required oil to do a deep fry. Fry cutlet on both sides. Drain on paper towels.
  • Tasty “Chicken Cutlet” is ready to serve

Chicken Curry with Coconut Milk | Vattal mulakittu arachu vecha kozhi curry

How to prepare Chicken Curry with Coconut Milk/Thanga pal ozhicha chicken curry?

Chicken Curry can be prepared in different style. In Kerala one of the variety of chicken curry you may find in restaurants are "Thenga paal ozhicha chicken curry/Chicken curry with coconut milk". 

In this recipe I haven't used chilli powder or green chilli. I have used only dried red chilli and pepper powder. So you will find a huge difference in the taste. Please try from your side and provide the feedback.

Ingredients:-
  • Chicken – 750 gm
  • Dried red chilli - 10
  • Garlic – 20 pods
  • Ginger – 2 Inch
  • Turmeric Powder – ¾ Tsp
  • Coriander Powder - 2 Tsp
  • Shallot/Small Onion – ½ Cup chopped
  • Oil as needed
  • Ghee ½ Tbsp
  • Cloves -5
  • Cinnamon Stick – 1 Inch
  • Cardamom – 3
  • Fennel Seeds – ¼ Tsp
  • Onion– 3 Big onion chopped
  • Tomato – 3 Medium size chopped
  • Chicken masala – 3 Tbsp
  • Pepper Powder – ½ Tsp
  • Garam Masala – ½ Tsp
  • Coconut milk – ¾ to 1 Cup (Prepared using ½ Cup Grated coconut)
  • Curry leaves as needed
  • Salt to taste

 
Preparation:-
  • Take a mixer jar and grind 8 dried red chilli, 20 pods of garlic, 2 inch ginger, ¾ Tsp turmeric powder, 2 Tsp coriander powder and make a thick paste
  • Transfer the dried red chilli paste, ½ Tsp chopped shallot/small onion and salt into the chicken and mix it well
  • Keep one big vessel in a stove and add 2 Tbsp oil and ½ Tbsp ghee
  • Once it become hot add spices (Cloves -5, Cinnamon Stick – 1 Inch, Cardamom - 3, Fennel Seeds – ¼ Tsp) into it and sauté well
  • Add curry leaves, 3 big chopped onion, 3 medium size chopped tomato, salt into it and sauté well
  • Transfer marinated chicken into the pan and mix well
  • Add 3 Tbsp chicken masala and mix well again
  • Add required water for the chicken gravy. Once it starts boiling keep the flame into sim to medium and close it by using a lid
  • Add ½ Tsp pepper powder, ½ Tsp garam masala mix well
  • Pour ¾ to 1 cup coconut milk prepared using ½ cup grated coconut and boil
  • Add curry leaves into the chicken curry
  • Once it starts boiling switch off the stove. Chicken curry is ready to serve

Varuthu Aracha Naadan Style Chicken Curry | Kerala Style Varuthu Aracha Chicken Curry

 Varuthu Aracha Naadan Style Chicken Curry | Kerala Style Varuthu Aracha Chicken Curry


Ingredients:-

Chicken – ¾ KG
Onion – 3 to 4 medium size
Tomato – 1
Ginger – 2 Inch
Garlic – 15 pods
Green chilli – 2
Turmeric Powder – ½ Tsp
Chilli Powder – 2 Tsp
Coriander powder – 1 ½ Tbsp
Chicken Masala – 1 Tsp
Grated Coconut – ¾ Cup
Cardamom – 4
Cloves - 5 to 6
Cinnamon – Small piece
Fennel Seeds – 1 Tsp
Whole Pepper - 1 Tsp
Curry leaves as needed
Salt to taste
Oil as needed




Preparation:-
  • Chop onion, tomato, green chilli, ginger and also crush the garlic
  • Heat a Kadai and pour oil into it. Add Onion, Salt, Green chilli, Ginger, Garlic, Curry leaves and sauté well. 
  • Add turmeric powder, chilli powder, coriander powder and chicken masala into the Kadai and continue sautéing
  • Add tomato into the mixture and continue sautéing
  • Add chicken into the Kadai and mix well. 
  • Add a little water into it and cook
  • Heat another pan to fry the grated coconut
  • Pour little oil and continue to fry the coconut
  • Add Cardamom, Cloves, Cinnamon stick, Fennel seeds, Whole Pepper and curry leaves into the coconut and sauté well
  • Grind the fried coconut mixture to make a thick paste using a mixer and keep it aside
  • Pour the fried coconut paste into the cooked chicken and mix well. Once it starts boiling switch off the stove 
  • Serve it hot with Rice or Chappathi!

Chicken Stew / Chicken Potato Stew





 Ingredients:-

Chicken – 750 gm
Onion – 2 Medium size
Potato – 2 Medium
Carrot – 1 Medium
Green Chilli – 3
Ginger – 1 Tbsp
Curry leaves as needs
Cardamom - 3
Cinnamon – Small stick
Cloves - 3
Star anise - 1
Pepper Powder – 2 ½ Tsp
Salt as need
Garam Masala – ½ Tsp
Coconut milk – ¾ Cup
Ground Cashew nut – 12 Cashew nuts (1/2 Cup)
Oil as required


Preparation:-

  • Marinate the fresh chicken using required salt and by adding 1 Tsp pepper powder and keep it aside for 10 to 15 min
  • Take a cooker and add oil. Once it is heated add Cardamom, Cloves, Cinnamon, Star Anise and sauté
  • Add onion into it, once it is mixed with the oil and half cooked, add green chilli, ginger and curry leaves and sauté well
  • Add potato, carrot and after some time add pepper powder and stir well
  • Add marinated chicken into the cooker and mix well. Add ¼ cup water and close the lid. Cook the chicken for medium to high flame for one whistle
  • Smash few potatoes and mix well
  • Add a little salt and then add coconut milk and boil
  • Add garam Masala and mix
  • Keep it in low flame and pour the cashew mix into it and stir well
  • Add curry leaves and boil
  • Pour a little coconut oil and switch off the stove
  • Server it with rice or chapathi

Ingredients:-

Chicken Boneless – 250 gm
Turmeric Powder – ½ Tsp
Pepper Powder - Tsp
Salt – As required
Soya sauce – 1 ½ Tsp
Honey – 1 Tsp
Dried Chilli flakes – 1 Tbsp
Corn Flour – 1 Tbsp
Oats – 1 ½ Tbsp
Garlic Crushed– ½ Tsp



Preparation:-

1.  Take a bowl add Soya Sause, Garlic, Turmeric Powder, Pepper Powder, Honey, salt and mix it well
2. Add Chicken into the mixture and mix it properly. Keep it aside for 10 min
3. Take a flat vessel and add Oats, Corn flour, dried chilli flakes, salt and mix well
4. Take marinated chicken pieces and coat the chicken with the oat mix. Repeat this for each pieces separately.
5. Pour required oil into the pan to fry the chicken pieces
6. Add chicken pieces one by one into the hot oil and fry both sides until it cook

Punjabi Chicken Curry/ Cashew Chicken





Ingredients:-


Chicken – ½ Kg
Onion - 1
Tomato -1
Ginger garlic paste - 1 Tbls
Cloves - 12
Whole Pepper -8
Cinnamon -1
Bay leaf -1
Cardamom -2
Chilli Powder - 3/4 Tbls
Turmeric Powder - 1/2 Tsp
Coriander Powder- 1 Tsp
Cumin Powder -1/4 Tsp
Coconut - 2 Tbls
Cashew nuts- 10
Sugar - 1/2 Tsp
Curd - 1/4 cup
Coriander leaves
Salt
Oil
Ghee - 1 Tbls



Preparation:-
  
  1. Marinate the chicken with salt and 1/4 Tsp Turmeric powder. And keep aside.
  2. Heat a pan. Add oil into it. Then add ghee.
  3. Add cloves, pepper, cinnamon, bay leaf and cardamom into the pan and sauté well.
  4. Add onion and sauté till it become golden colour. Add a little salt while sautéing.
  5. Then add sugar and sauté till sugar dissolves.
  6. Add chilli powder, turmeric powder, coriander powder, cumin powder into the onion and sauté well.
  7. Add tomato and stir continuously until it cooks.
  8. Take a bowl and mix curd and ginger garlic paste.
  9. Add curd mixture into the gravy little by little.
  10. Grind coconut and cashew nuts into a paste and add it into the gravy. And cook for 1 min.
  11. Add marinated chicken and mix well. Add salt and water and close the lid. Cook for few min till chicken cooks.
  12. Add coriander leaves
  13. Serve with chapathi, pulav etc.

Rice Flour Coated Chicken Fry | Crispy Chicken Fry

Ingredients:-
Chicken      -10 pieces
Ginger       - 1 inch piece
Garlic       - 5
Green Chilli -1
Curry Leaves
Chilli Powder -1/2 Tsp
Turmeric Powder- 1/4 Tsp
Coriander Powder -1/2 Tsp
Whole pepper corn -5
Rice flour       - 1Tbls
Salt
Oil




Method

1. Grind ginger, garlic, green chilli, curry leaves, chilli powder , Whole pepper corn, turmeric powder and coriander powder.
2. Put the ground paste into the chicken and mix well.
3. Add salt and again mix.
4. Keep it in the refrigerator for half an hour.
5. Add rice flour into the marinated chicken and mix.
6. Add oil into the kadai and fry the chicken.
7. Serve it as a starter.

Bachelors Chicken Curry/ Easy Chicken Curry


Ingredients:-

Chicken - 1/2 Kg
Onion - 12 Medium
Tomato - 2 Medium
Green Chilli - 1
Curry Leaves
Garlic -25 Pods
Ginger - small piece
Turmeric Powder - 1 Tsp
Chilli Powder - 1 Tbls
Coriander Powder -2 Tbls
Black Pepper Corns - 1 Tsp
Chicken Masala -1 Tbls
Garam Masala - 1/2 tsp
Salt
Oil
Water


Method:-
1. Grind Onion, tomato, green chilli, garlic, ginger, pepper corns.
2. Add ground paste into the chicken and mix well.
3. Add turmeric powder, chilli powder, coriander powder, chicken masala and curry leaves. Mix well.
4. Add salt into the chicken and keep it aside for minimum 10 min.
5.Heat a Pressure cooker. Add oil and add the marinated chicken.
6. Saute well for 1 min.
7. Close the lid and cook.
8.  Once it cook add some more water depending on the gravy you need.
9. Once the curry stated boiling add garam masala and some more curry leaves.
10. Serve with Chapathi, rice etc.

Kerala Style Dry Pepper Chicken







Ingredients :-

Chicken - 750 gm
Pepper Powder - 3 1/2 Tbls
Red Chilli Powder - 1 Tbls
Chicken Masala - 1 Tbls
Turmeric -1 Tsp
Coriander powder -2 Tsp
Salt
Oil - 2 Tbls
Onion - 3 Medium
Tomato - 1 Big
Green Chilli - 2 No.s
Garlic - 1 1/2 Tbls
Ginger -1/2 Tbls
Coconut Pieces -3/4 Cup
Curry Leaves



Marination:-
Marinate the chicken with salt, 1 Tbls Chilli Powder, 1 Tbls Chicken masala, 1 Tsp Turmeric Powder. Keep it in a refrigerator for 1 hour.

Preparation :-

1. Cook Chicken in a pressure cooker
2. Heat oil in a Kadai
3. Add Onion and stir well.
4. Add Salt and turmeric(1/2 Tsp) and saute the onions until it is lightly brown in color.
5. Add ginger, garlic ,green chilli and Tomato. Saute well.
6. Add Coriander powder and Pepper Powder(1Tbls). And saute well
7. Add curry Leaves
8. Add Cooked chicken and mix well . Cover and cook for about 7 min.
9. Last add 2 Tbls Pepper and coconut pieces and mix well
10. Serve with Hot rice or Chapathi

Boneless Chicken Fry



Ingredients
Chicken pieces(boneless) - 200 gms
Chilli powder - 1/2 tsp
Turmeric powder  - 1/4 tsp
Coriander powder   -1 1/2 tsp
Pepper powder - 1 tsp
Ginger garlic paste - 1 tsp
Garam masala powder - 1/2 tsp
Lime juice - 1 tsp
Salt
curry leaves
Oil

Preparation

  • In a bowl marinate chicken pieces with all the ingredients except oil and curry leaves and keep aside for 15 minutes.
  • Pressure cook the chicken without adding water.
  • Heat oil in a pan add curry leaves and then add cooked chicken pieces. Then shallow fry the chicken in low heat for 5 minutes, turning it occasionally.
  • Serve hot with rice or chapathi.

Chettinad Chicken




Ingredients
Chicken – 1 Kg
Onion  - 1 Large(Finely chopped)
Tomato  -2 Chopped
Ginger  - Tsp(Crushed)
Garlic   -1 Tsp(Crushed)
Red chilli powder – 1 Tsp
Turmeric powder – 1/2 Tsp
Chicken masala 1 Tsp
Lemon juice  - 1 Tsp
Mustard seeds
Curry leaves
Water
Oil

Ingredients for grinding

Cinnamon stick – 1
Cloves  -4
Cardamon  - 3
Cumin seeds   - 1 1/2 Tsp
Fenel seeds  - 1/2 Tsp
Coriander seeds  - 2 Tsp
Dry red chilli  -5
Peppercorn  -1 Tsp
Curry leaves
Coconut - 1/2  to 3/4 Cup
Water


Preparation

  • Heat a kadai and add cinamon, cloves, cardamon,Peppercorn,coriander seeds,cumin seeds,fenel seeds ,red chili and curry leaves. Roast it well on a low flame.
  • Then add coconut and sauté well until it looks dry.
  • Once it done allowed it to cool .
  • After that grind it using a little water(1/2 cup is enough).
  • Heat oil in a pan and add onion and add salt to it. Saute until it translucent.
  • Then add garlic and ginger and saute for few minutes.
  • Then add chili powder,turmeric powder,chicken masala,curryleaves and cook for a minute.
  • Add the sliced tomatoes and saute well until the oil separated.
  • Add the chicken and mix well and cook for 5 min.
  • Then add lemon juice and mix well.
  • Add water according to the gravy you want  and cook for 25 min.
  • Once it done heat oil in pan and add mustard seeds and allow it splutter.
  • Add it into the chicken.
  • Serve it hot with rice, chapathi, appam

Butter Chicken (Murgh Makhani)


Ingredients

Chicken – 1 KG
Tomato – 3 Big
Ginger garlic paste – 2 table aspoon
Green chilli – 2
Cardamom - 4
Bay Leaf -1
Cinnamon stick – 2 pieces
Chilli powder – 3 Tea Spoon
Tandoori Masala – 2 Tea Spoon
Turmeric powder – 1 Tea Spoon
Coriander powder – 2 Tea Spoon
Chicken masala – 2 Tea Spoon
Yogurt/curd – 1 Tea spoon
Double Cream – 50 ml.
Oil – 1 Table Spoon
Butter – 2 Table Spoon
Salt – For taste

Preparation
1.        Chicken
a.        Cut chicken into small pieces and then add tandoori masala, chilli powder (1 Tea Spoon), salt and curd. Keep it in the refrigerator for minimum 2 hours for best results.
b.        Place the chicken into Oven safe tray and put it inside the oven. Broil the chicken at 200 degree for 10 minutes both sides.
2.        Boil tomatoes for 5- 10 minutes to peel the skin smoothly. Grind the peeled tomato with a little water.
3.        Heat the pan and add oil and butter into it. Then add cardamom, bay leaf and cinnamon stick and fry it.
4.        Add ginger garlic paste, fry it for 1- 2 minutes until it looses raw smell
5.        Add green chillies and stir well. Add tomato puree into it. Then add chilli powder (2 Tea Spoon), turmeric powder, coriander powder, Chicken masala, salt (as required) Mix well until oil and masala gets separated.
6.        Add Tandoori chicken in to it, stir well and add a little water (1/2 Glass) and then boil it for 5 minutes.
7.        Add double cream and heat it lightly.
Now delicious Butter chicken is ready, garnish the same with curry leaves / coriander leaves.
