How to prepare Sadya Special Padavalam Olan | Snake Gourd Olan | Onam Vishu Sadya SPecial Padavalanga Olan

Normally Olan is prepared using Pumpkin and Vanpayar. This is a different Olan recipe prepared using snake guard and green gram. This Olan has got a different taste and everyone likes this taste. Olan is one of the mandatory item in Kerala Sadya. Next time when you prepare Olan for a variety try to prepare it in the way I have showed here. 

Sadya Special Padavalam Olan | Snake Gourd Olan | Onam Vishu Sadya Padavalanga Olan

Ingredients:-

  • Snake Guard - 1
  • Green gram (Soaked) – ¼ Cup
  • Green Chilli- 2
  • Coconut Milk- 1 Cup
  • Coconut Oil
  • Curry Leaves
  • Salt

Preparation:-

  • Cook Green gram with green chilli and salt
  • Cook snake guard with green chilli and salt
  • Mix cooked green gram and snake guard
  • Add coconut milk, curry leaves and boil
  • Add coconut oil and switch off the stove
  • Tasty Sadya special Padavalam Olan | Snake Gourd Olan is ready to serve

Broken wheat Upma is very very delicious. Nurukku Gothambu is rich in fiber and the upma prepared using broken what is very healthy and tasty. You may eat this delicious Soochi Gothambu Upma along with Banana and Sugar or with Kadala Curry.

Broken Wheat Upma | Soochi Gothambu Uppumav | Nurukku Gothambu Uppumav


Ingredients:-

  • Broken Wheat – 1 ½ Cup
  • Onion – ½ 
  • Carrot – ½
  • Green Chilli – 1
  • Ginger – ½ inch
  • Curry Leaves as required 
  • Mustard Seeds – 1 Teaspoon
  • Urad Dal – 1 Table spoon
  • Ghee – 1 Table spoon
  • Salt to taste
  • Oil as required

Preparation:- 

  • Take a pan, add oil and heat
  • Splutter mustard seeds
  • Add urad dal and sauté
  • Add onion, carrot, ginger, green chilli and curry leaves and sauté well
  • Add water and Salt to taste into it and boil
  • Add broken wheat and mix well
  • Close the lid and cook for 4 to 5 min in low flame
  • Open the lid and add ghee into it and mix it
  • Close with a lid and switch off the flame
  • Tasty Broken wheat Upma/ Nurukku Gothambu Uppumav is ready to serve

Vazha Kaambu or Banana Stem is one of the very healthy vegetable easily available in most of the houses in kerala. Preparing puzhukku using Vazhakaambu is very easy and here I am showing how to prepare an easy vazha Kaambu cherupayar Puzhukku / Banana Stem green gram puzhukku in typical kerala style.

Kerala Special Vazha Kaambu cherupayar Puzhukku /Banana Stem Green Gram Puzhukku?

Ingredients:-

  • Banana Stem sliced - 1 cup
  • Green gram (Soaked) – ¼ Cup
  • Salt to taste
  • Water as required
  • Green chilli – 2
  • Turmeric Powder – ½ Teaspoon
  • Curry leaves as required
  • Grated coconut – ½ Cup
  • Raw coconut oil

Preparation:-

  • Clean and cut Banana stem into small pieces
  • Take a cooker and Cook green gram by adding required salt and water
  • Add banana stem, green chilli, salt to taste, and turmeric powder, curry leaves required water and cook again
  • Smash banana stem and then add grated coconut and mix it well
  • Switch off the stove and pour a little raw coconut oil
  • Tasty banana stem cherupayar puzhukku is ready to serve.
  • Serve it hot with rice, Chappathi!

Eenth or Cycads is used to prepare nutritious dishes. It is a rich source of proteins, carbohydrates and helps to control blood pressure. Eenthu Virakiyathu looks like a Payasam with less sweetness. Eenth Virakiyathu or  Cycads pudding one of the healthy dish you must try at home when you get dried Eenthu or Cycads.

Eenthu Virakiyathu |  Cycads pudding | Special Eenthu Payasam


Ingredients:-

  • Eenthu (Cycads) – 1 ½ cup Soaked in water
  • Jaggery – 250-300 gram
  • Coconut milk – 1 ½ Cup
  • Cardamom – 3 
  • Ghee – 1 Tsp
  • Chana dal (Cooked) – ¼ Cup 
  • Salt a pinch

Preparation:-

  • Grind eenthu/ Cycads by adding water
  • Melt jaggery
  • Take a vessel and add ground eenthu, melted jaggery, coconut milk and cardamom
  • Switch on the stove and stir well
  • Add ghee into it and mix it well
  • Add salt as required
  • Once it start boiling add cooked chana and mix well 
  • Stir continuously until it reaches the required consistency 
  • Tasty Eenthu Virakiyathu / Cycads pudding is ready to serve

Soft and Instant Ragi Flour Idly | Ragi Podi Idly?


Ingredients:-

  • Ragi flour – 2 Cup
  • Rava/Semilona – ½ Cup
  • Curd – 1 Cup
  • Baking Soda – ¼ Teaspoon
  • Salt to taste 
  • Water – 1/3 Cup

Preparation:-

  • Take a bowl and add ragi flour, rava/Semolina and mix it well
  • Add curd into the bowl and mix it again
  • Pour water little by little and mix it well until it reaches the required consistency and then keep it aside for 30 min
  • After 30 min open the lid and mix it again. Add baking soda, salt to taste and mix it well
  • Take an idly plate and fill the moulds with batter and steam it for 10 to 12 min
  • Using a spoon remove the idly from the plate and serve it hot

Vellayappam/Palappam is one of the favorite breakfast in Kerala. If you visit any restaurants in Kerala you will find Vellayappam/appam as one of the breakfast item. Every home in a week on rotation vellayappam/appam is prepared as one day’s breakfast. This soft vellayappam/appam can be eaten with varieties of curries like Kadala, Cherupayar, Stew etc but famous curry to be used along with vellayappam is egg curry / mutta curry. Vellayappam can be prepared using rice, ragi, wheat etc. Here I am showing how to prepare vellayappam/palappam using Nurukku Gothambu or Broken Wheat. Nurukku Gothambu Vellayappam | Broken Wheat Palappam


Ingredients:-

  • Broken Wheat Soaked– 1 Cup
  • Beaten Rice/Aval – ½ Cup
  • Yeast – ¼ Teaspoon
  • Sugar – 1 Teaspoon
  • Water – 1 Cup
  • Salt to taste

Preparation:-

  • Take a mixer jar and add soaked broken wheat, beaten Rice, yeast, sugar, water and grind it well
  • Transfer the ground batter into a vessel and add salt on top of it. Keep it aside for 6 to 8 hours
  • After 8 hours take out the batter and stir it well
  • Heat a pan suitable to make appam (Appam Chatti) and pour a spoon full batter and spread it over. Close the vessel using lid for 2 to 3 min.
  • After 2 to 3 min take out the appam
  • Tasty Broken Wheat / Nurukku Gothambu Vellayappam is ready to serve

Red Rice (Kuthari) dosa is easy to make and no fermentation is required. You can prepare the dosa plain or you may add grated coconut. Only few ingredients are required for making Kuthari dosa. This dosa tastes totally different from other varieties of Dosa. Try to make this Dosa as shown in the video and let me know the feedback.

Kuthari Dosa

Ingredients:-

  • Red rice (Matta Rice) Soaked – 2 Cup
  • Beaten Rice (Aval) – 1 Cup
  • Grated Coconut - 
  • Salt to taste
  • Water as needed

Red Rice Dosa

Preparation:-

  • Take a mixer jar and add Rice, Aval, required water and grind it well
  • Transfer the ground batter into a vessel and keep it for 10 min
  • Add salt and grated coconut into it and mix well
  • Heat a pan and pour a spoon full batter and spread it over. Close the pan using a lid for 2 to 3 min and flip the dosa 
  • Tasty Dosa is ready to serve

Rava dosa is easy to make and no fermentation required. To make perfect crispy Rava Dosa, the batter has to be thin or watery. You can make the Rava Dosa plain or you may add onion on top of it. Only few ingredients are required for making Rava Dosa. It is always better to eat Dosa as soon as it is prepared otherwise Dosa may not be cryspy. Hot Rava Dosa and a coconut chutney is a perfect combination for breakfast. Please prepare this Crispy Rava Dosa as I showed in the video and let me know your feedback.

Crispy Rava Dosa | Instant Rava Dosa | Rava Dosa | Easy Breakfast


Ingredients:-

  • Rava/Semolina – 2 Cup
  • Rice flour- 3 Tablespoon
  • Curd – ½ Cup
  • Water – 3 Cup
  • Onion – 1 Medium
  • Green Chilli – 1
  • Curry leaves as needed
  • Ghee as needed
  • Salt to taste

Preparation:-

  • Take a mixer jar and add rava/Semolina, Rice Four, Curd, required water and grind it well
  • Transfer the ground batter into a vessel and add salt into it. Keep it aside for half an hours
  • After half an hour take out the batter and add chopped onion, green chilli, curry leaves and stir it well
  • Heat a pan and pour a spoon full batter and spread it over. Close the vessel using a lid for 2 to 3 min.
  • Add ghee on top of Dosa and flip the dosa 
  • Tasty rava dosa is ready to serve

Upma is prepared many ways. Rava/Sooji, Broken wheat etc are the main ingredients we use while preparing Upma. Here I am showing Upma recipe prepared using vermicelli. This vermicelli uppumavu is very soft and each vermicelli is separate from each other. Vermicelli uppumav can be prepared as breakfast as well as evening snack. Since this is one of the healthy dish you must try this vermicelli Upma. As usual once you prepare Vermicelli Upma please share the feedback.

Semiya Uppumavu | Vermicelli Upma | Breakfast Upma

Ingredients:-

  • Vermicelli - 2 Cup
  • Mustard Seeds – ½ Teaspoon
  • Dry red chilli – 2
  • Curry leaves as required
  • Urad dal – ½ Teaspoon
  • Chana dal – 1 Teaspoon
  • Peanut 1- 1 Tablespoon
  • Ginger- ¼ Teaspoon chopped
  • Onion – 1 small chopped
  • Carrot – ¼ cup chopped
  • Beans- ¼ Cup chopped
  • Lemon juice- ¼ Teaspoon
  • Salt to taste
  • Coriander leaves

 

Preparation:-

  • Boil water in a vessel with required salt and then add vermicelli and cook for 2 min
  • Drain the water
  • Heat oil in a pan, splutter mustard seeds. Add dried red chilli, Curry leaves, Urad dal, Chana dal, peanuts and sauté well
  • Add chopped ginger and sauté again
  • Add onion, carrot, beans and required salt and cook well for 2 min by closing the pan
  • Transfer cooked vermicelli and add some ghee into it and mix it well
  • Add coriander leaves and lemon juice into it and mix it well
  • Tasty Vermicilli Upma is ready to serve

  • Plantain - 1
  • Elephant Yam – A small portion
  • Turmeric Powder – ½ Tsp
  • Chilli Powder- 1 ½ Tsp
  • Grated Coconut – 1 Cup
  • Green Chilli - 1
  • Cumin Seeds – ¾ Tsp
  • Mustard Seeds
  • Dry red chilli -2
  • Curry leaves
  • Salt

 Koottucurry Style Erisseri

 Preparation:-

  • Add Elephant Yam, Plantain, salt, Turmeric powder, chilli powder and water into a cooker and cook well
  • Grind ½ Cup coconut, green chilli and cumin seeds by adding required water
  • Add ground coconut into cooked vegetables. Add curry leaves and boil
  • Add coconut oil in a pan, splutter mustard seeds. Add remaining coconut, Curry leaves, dry red chilli and sauté well
  • Add fried coconut into the curry
  • Tasty Chena Pachakaya Erisseri is ready to serve

Ingredients:-
  • Bitter Gourd – 1
  • Garlic – 2 Pods
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – 1 Teaspoon
  • Grated coconut – ¼ Cup
  • Vinegar – 1 Teaspoon
  • Curry Leaves
  • Mustard Seeds – ½ Teaspoon
  • Salt to taste
  • Oil as required

 

Preparation:-
  • Cut bitter gourd into small pieces
  • Cut Garlic into small pieces or crush
  • Heat oil in a pan and splutter mustard seeds
  • Add turmeric powder, chilli powder, garlic, curry leaves into the pan and sauté well
  • Transfer cut bitter gourd and salt into the pan and sauté well
  • Close the vessel and cook well
  • Add grated coconut and mix it well
  • Close the vessel and cook
  • Switch off the stove and pour vinegar and mix it well
  • Tasty bitter gourd stir fry is ready to serve

Ingredients:-

  • Dates – 15 (Crushed)
  • Wheat flour (Atta) – 1 Cup

Preparation:-
  • Add wheat flour in a mixing bowl
  • Add water gradually and knead into a soft dough
  • Makes medium balls of the dough
  • Roll them into a circle
  • Add a portion of the dates paste in the centre
  • Seal it and round it
  • Roll them again
  • Heat a pan and cook the chapathi. Apply ghee on both sides
  • Dates chapathi is ready to serve

  • When it starts boiling add sugar, cinnamon stick and cloves and allow it to boil
  • Add tea powder and boil

Preparation:-
  • Cut ivy gourd and onion into small pieces
  • Take a bowl and add ivy Gourd/kovakkai, onion, curry leaves, salt to taste and mix it well
  • Heat oil in a pan and add dried chilli flakes, turmeric powder and sauté well
  • Transfer cut ivy gourd into the pan and sauté well
  • Close the vessel and cook well
  • Mix it well continuously
  • Switch off the stove once it is dry
  • Tasty ivy gourdKovakkai stir fry is ready to serve

  • Cooked Rice – 6 Cup
  • Palak – 1 Bundle (10 leaves)
  • Onion – ½ portion
  • Green chilli - 2
  • Garlic – 4 pods
  • Cumin Seeds – ½ teaspoon
  • Turmeric powder – ¼ teaspoon
  • Salt to taste



Preparation:-
  • Boil palak by adding required water
  • Heat oil in a pan and add cumin seeds, garlic and sauté well
  • Add onion, green chilli, salt to taste and continue sautéing
  • Add grinded palak paste and turmeric powder into the pan and sauté well
  • Transfer cooked rice and mix it well
  • Tasty Palak rice is ready to serve.
