Thiruvathira Special Kappa Puzhukku | Kappa Pachakkaya Puzhukku



Ingredients
  • Tapioca – 1 kg
  • Raw Plantain – 1
  • Green Gram (Soaked) – 150 gram
  • Grated Coconut – 1 cup
  • Shallot (Small Onion) – 8 Pods
  • Garlic – 3 Pods
  • Green Chilli – 1
  • Turmeric Powder– 1 Teaspoon
  • Chilli Powder – 1 Tablespoon
  • Salt as needed
  • Mustard – 1 Teaspoon
  • Curry Leaves as needed
  • Dry Red chilli – 2
  • Oil as needed

 

Preparation:-
  • Cook tapioca by adding required water in a cooker
  • Take another cooker and cook green gram and raw plantain. Add required salt, turmeric powder, chilli powder and water.
  • Take a mixer jar and crush grated coconut, shallot, garlic, green chilli
  • Smash few tapioca and then add cooked green gram and raw plantain into the cooker and mix it well
  • Add crushed coconut and mix it well. Add required water.
  • Add curry leaves and allow it to boil
  • Switch off the stove once it reaches the required consistency.
  • Heat oil in a pan, splutter mustard seeds and then add dry red chilli and sauté.
  • Transfer the spluttered mustard into the tapioca puzhukku.
  • Tasty Tapioca, green gram, raw plantain puzhukku is ready to serve.

Ingredients:-
  • Banana (Palayamkodan)– 1 Kg
  • Sugar – 1 Kg
  • Yeast – 1 Teaspoon (Soaked in 4 Teaspoon warm water)
  • Cloves - 3
  • Cinnamon – Small Piece
  • Mace – Small Piece
  • Whole Wheat – 1 ½ Table Spoon
  • Dried red chilli – 3
  • Cooled Boiled water – 2 Litre

 

Preparation:-
  • Take a big pot/vessel and add sliced banana, sugar into it and mix it well  
  • Add yeast into the vessel and mix it again
  • Add cloves, cinnamon, mace, wheat, dried red chilli and mix it again.
  • Pour cooled boiled water into the vessel and mix it well. Make sure you leave 25% space as it the mixture will rise gradually.
  • Close the vessel using a lid and also cover it using a cloth
  • Keep it in a dark place and stir well everyday morning around same time for 2 to 3 min
  • Open the cover and stir well. Make sure to use same wooden spatula without any water content.
  • Close the vessel again using a lid and also cover it using a cloth.
  • Open the cover and stir well and then filter the banana pulp.
  • Pour the wine into a bottle. Tasty banana wine is ready to serve.

Ingredients:- 
  • Puttu Podi (Rice Flour) – 2 Cup
  • Banana – 2 sliced
  • Grated Coconut – 1 cup
  • Cardamom powder - 1 pinch
  • Ghee – 1 Tea spoon
  • Sugar – 1 Table spoon
  • Salt to taste


Preparation:-
  • Take a bowl and mix puttu podi (Rice Flour) and salt. Add water little by little and mix the rice flour well.
  • Take another bowl with sliced banana, add sugar, grated coconut (1 to 1 ½ Table Spoon), cardamom powder, ghee into it and mix it well
  • Take a puttu making vessel and fill the items in the order of grated coconut, banana, puttu podi. Repeat the same until the vessel become full.
  • Keep the puttu making vessel over the cooker for 5 to 10 min for steaming
  • Transfer the puttu into a plate, soft and tasty pazham puttu is ready to serve

Malabar Special Kaipola


Ingredients:-
  • Banana (Nenthra Pazham) – 1 Cut into small pieces
  • Sugar – 3 to 4 Tbsp
  • Egg - 2
  • Cardamom Powder – 6 Crushed
  • Cashew as needed
  • Raisins as needed
  • Ghee – 2 to 3 Tbsp


Preparation:-
  • Take a vessel and beat the eggs well by mixing the sugar
  • Heat a pan and add ghee into it. Add Cashew and then raisins and sauté well and transfer that into a vessel.
  • Add little more ghee into the same pan and add banana into it and fry it until light brown
  • Transfer the fried banana into the beaten egg and mix it well
  • Add cardamom powder into it 
  • Add little more ghee and transfer the egg and banana mix into it and then add cashew and raisins into the mixture and cook well for 10 to 15 min
  • Make sure you keep the flame low otherwise it may burn
  • Tasty kaipola is ready to serve

Ingredients:- 
  • Raw Banana - 2
  • Turmeric Powder - 1 ½ Tsp
  • Salt – 2 Tsp
  • Oil as need to fry

 

Preparation:-
  • Peel off the raw banana. Apply little oil in your hand to avoid stains on your hand
  • Take a vessel and pour water to dip the raw banana. Add 1 ½ Tsp turmeric into it and keep the banana into this water for 20 to 30 min
  • After 20 to 30 min take out the banana from turmeric water and dry it out using a tissue or dry cloth
  • Cut the raw banana into 4 pieces to make the chips
  • Take another vessel and add 2 Tsp salt and mix it well. This will be used later while frying the banana
  • Heat a pan and pour coconut oil. Once it become hot add cut banana into the oil and do deep fry
  • Pour 2 Tbsp salt water into the oil and continue to fry until it become crispy
  • Varutha upperi/Kaya Nurukku upperi is ready to serve

Ingredients:-
  • Maida – 1 Cup (150 ml)
  • Banana Robust- 1
  • Curd - 3 Tbsp
  • Baking Soda – ½ Tsp
  • Salt as required
  • Sugar – 1 to 2 Tbsp
  • Cumin Seeds – ½ Tsp
  • Ghee – ½ Tsp
  • Oil as required


Preparation:-
  • Take a mixer jar and add banana, curd, sugar and blend well
  • Take a big vessel and add Maida into it then add Cumin seeds, Salt and Baking soda and mix well
  • Pour the blended banana mixture into the Maida and knead well
  • Add little ghee into the mixture and again knead it well
  • Transfer the dough into a small bowl and add the balance ghee on top of it and cover it well. Keep the dough aside for 4 to 8 hours
  • After 4 to 8 hours open the cover and knead the dough again
  • Make medium size balls using the dough
  • Now take one of the balls and place it on a flat surface dusted with Maida flour.  Using a rolling pin, roll the ball to a circular shape
  • Take a pan and pour the oil to fry the bun
  • When one side is cooked flip it over to cook the other side
  • Serve it hot with chutney!

Ingredients:-
  • Banana – 3
  • Grated Coconut – 6 Tbsp
  • Sugar – 2 Tbsp
  • Cardamom powder – 3 Pinch
  • All Purpose Floor (Maida) - 2 Tbsp
  • Salt as required
  • Oil as required
  • Ghee – 1 Tbsp
  • Cashew nuts as required
  • Raisins as required


Preparation:-
  • Peel off the banana and remove the black portion from the middle
  • Take a pan and add ghee, once it is melted add coconut and sauté well  
  • Add sugar, cardamom powder into it and stir well, add cashew nuts and raisins into the mixture and sauté well until the coconut become brown
  • Take a bowl and add All-purpose flour/Maida into it, add salt and required water into the maida and mix well to make a think batter
  • Fill the coconut sugar mixture into the partially slit banana
  • Seal the slit banana portion using the Maida mix
  • Take a pan and add oil to fry the banana
  • Fry the banana on both sides until it become brown in colour
  • Serve it hot

Curd – ½ Cup
Milk -1 Cup
Cashew Nuts - 8

    • Take a mixer and blend the pineapple, Banana, Cashew, Cardamom, Curd, Honey, Milk, and Ice Cubes
    • Pour the juice into a serving glass

    Pazha Pradhaman / Banana Kheer / Nenthrapazha Payasam




    Pazha Pradhaman / Banana Kheer / Nenthrapazha Payasam



    Ingredients:-

    Banana – ½ Kg
    Coconut grated for taking milk– 2 Nos
    ·         First Milk – ½ Cup
    ·         Second Milk – 1 ½ Ltr
    ·         Third Milk – ¾ Cup
    Jaggery – ½ Kg
    Cashew Nuts
    Raisins
    Cut Coconut – 2 Tbsp
    Ghee as required

     
    Preparation:-

    • Boil the banana and remove the black portion inside the banana
    • Squeeze the grated coconut to get ½ cup first milk. Add some water and squeeze it to get second and third milk
    • Grind the banana by adding a little third milk and make thick paste
    • Melt the jaggery by adding third coconut milk
    • Take a cooking vessel, pour jaggery water into the banana paste and mix well. Stir continuously until it became thick.
    • Add ghee into the mixture when it started thickening. It may take approximately 20 min
    • Pour second milk little by little till it gets its proper consistency. You may not require full 1 ½ ltr second milk, here I used 1 litre and 1 glass
    • Add a pinch salt into the payasam
    • Stir continuously for 10 to 15 min
    • To check the consistency, pour a little paysam into a vessel and turn it around. If it stick to the vessel then payasam is ready
    • Switch off the stove and pour the first milk
    • Add cardamom powder into the payasam and stir well
    • Add ghee to a pan, once it is hot add cut coconut and stir well. When coconut gets brown colour add cashew and then raisins
    • Add it into the Payasam and mix well
    • Server it hot!

    Butter Banana Milk Shake / Banana Milk Shake





    Ingredients:-

    Banana Robusta – 3
    Milk – 1 1/2 Cup
    Honey – 4 Tsp
    Butter – 2 1/2 Tbsp
    Cinnamon Powder– 1 Pinch



    Preparation:-

    1. Cut the Banana into small pieces
    2. Take a pan and add butter
    3. Once the butter is melted add the banana pieces and fry
    4. Let it cool for some time
    5. Take a juice mixer and add fried Banana, honey, cinnamon, Milk and ice cubes and blend it thoroughly
    6. Pour into a juice glass and serve it

    Plantain fry / Pachakaaya fry





    Ingredients:-
    Raw plantain – 2
    Rice Flour – ¾ Cup
    Chili Powder – 2 Tsp
    Turmeric Powder - ½ Tsp
    Pepper Powder – ½ Tsp
    Garlic – 8 Pods
    Green Chilli - 1
    Ginger Garlic Paste – 1 Tsp
    Curd – 3 Tbsp
    Curry leaves
    Salt – As needed
    Oil – As needed
    Mustard seeds – 1 Tsp
    Cumin seeds – ¼ Tsp
    Urad Dhal – 1 Tsp

    Dry red chilli – 4


    Preparation:-
    1. Peel the raw plantain
    2. Cut the plantain into medium pieces
    3. Soak it into the salt water for 15 to 20 min
    4. Take a bowl and add Rice flour, salt, ginger garlic paste, chilli Powder, Pepper powder and mix well
    5. Pour water to make thick batter
    6. Put the plantain into the rice flour mix and coat the mix over the plantain
    7. Keep it aside for 5 to 10 min
    8. Take a pan and add oil to fry the plantain
    9. Add plantain pieces one by one into the pan and fry both sides until it cook
    10. Keep the fried plantain aside
    11. Splutter mustard seeds, cumin seeds add urad dhal and fry
    12. Add dried red chilli and curry leaves and sauté well
    13. Add green chilli and garlic, stir well until its raw smell goes away
    14.  Keep the flame law and add curd and stir continuously
    15.  Add turmeric, chilli powder and stir well until its raw smell goes away
    16. Add salt
    17. Add fried plantain and mix until it gets coated the masala
    18. Enjoy with rice or chappathi as a side dish!

    Kerala Sadya Special Koottu Curry | Malabar Style Koottu Curry | Kootu Curry


    Ingredients:-
    Raw Plantain – ¾ Cup
    Yam – ¾ Cup
    Soaked Black Chickpeas – ¾ Cup (Soak overnight)
    Red Chilli Powder - 3/4 Tsp
    Turmeric Powder - 3/4 Tsp
    Pepper Powder - 1/4 Tsp
    Green Chilli - 1
    Curry Leaves
    Salt - To taste
    Jaggery - A very small piece



    For Grinding:-

    Grated coconut - 3/4 cup
    Cumin seeds - 1/4 tsp

    For Seasoning:-

    Grated coconut - 1/2 Cup
    Coconut Pieces - 1/2 Cup
    Mustard seeds - 1/2 tsp
    Dry red chilli - 2

     Preparation:-
    1. Pressure cook black chickpeas by adding enough water
    2. Add Raw Plantain and yam into the pressure cooker along with chickpeas
    3. Add salt, Turmeric, Chilli powder and curry leaves. Add enough water and pressure cook
    4. Grind 3/4 Cup grated coconut, cumin seeds, green chilli together with little water
    5. Add ground coconut mixture into the cooked vegetables, mix well and cook until it start boiling. Add Pepper powder and jaggery. Switch of the flame and keep it aside
    6. Heat a pan. Add coconut oil. Splutter mustard seeds and curry leaves. Add coconut pieces and fry well .once it start changing the colour add grated coconut and dry red chilli. Roast it until golden brown colour. 
    7. Add this over the prepared koottu curry
    8. Cover it and allow it to stand for at least 10 min for better taste.
    9. Enjoy with rice

    Banana Fritters/ Etha Pazham appam



    Ingredients:-

     Banana - 1
    Sugar - min 1 Tbls (Depends on the sweetness of the banana)
    Corn Flour - 5 Tbls
    Coarse rice flour - 1 Tbls
    Milk - 1 Tbls
    Cardamom - 2 No.s 
    Oil -As Needed


    Method:-

    1.     Blend Banana
    2.     Grind Sugar with Cardamom.
    3.     Mix Powdered sugar into the mashed banana.
    4.     Add milk into it and mix well.
    5.     Add Corn flour to the banana mixture little by little and mix well.
    6.     Last add rice flour into the mixture and mix well.
    7.     Heat a pan and add oil for frying.
    8.     Once the oil is hot add a spoon full of mixture into the oil. Flip them in between.

    9.     Serve with hot Tea.

    Unnakkaya/ Kerala Style Stuffed Banana




    Ingredients:-

     Ripped Banana - 1 
    Coconut Grated - 1/4 Cup 
    Coconut Grated - 3/4 Cup 
    Cashew Nuts - As Needed 
    Raisins - as Needed 
    Sugar - 1 1/2 Tbls 
    Cardamom Powder - 1/2 Tsp 
    Ghee - 1 Tsp 
    Coconut oil -As Needed


    Method:- 


    1. Steam Banana. 
    2. Smash or grind the banana without adding water
     3. Heat a pan. Add ghee and fry cashew nuts and raisins. Keep it aside. 
    4. Fry the grated coconut. Add cardamom powder and sugar into it. Add the fried cashews and raisins also. 
    5. Spread oil into hand and make ball using the smashed banana. Press the ball and add coconut mixture in the center. Shape it like an unnakkaya. 
    6. Add oil into a kadai. Fry the unnakkaya. Fry both the sides until it turns brown color. 
    7. Serve with hot Tea.


    NB: - You can either Shallow fry it or deep fry it.
