Kesari is one of the very famous sweet across India. Authentic Kesari is prepared using Rava. Here I am showing you how to prepare Kesari using wheat Flour. You may find similar taste of Kesary prepared Using Rava when it is prepared using wheat flour.  Kerai preparation using gothambu podi is very simple and quick. Try to prepare wheat flour/Gothambu podi Kesari using the method I have shown in this video and share the feedback.

Ingredients:-

  • Wheat flour – 1 Cup
  • Jaggery - ¾ Cup
  • Cashew nuts
  • Raisins
  • Cardamom – 5
  • Ghee – 4 Table Spoon
  • Water – 1 1/2

Preparation:-

  • Add 2 Tablespoon ghee into a pan and fry wheat flour till it become light brown in color
  • Add 1 Tablespoon ghee and fry cashew and raisins and keep it aside
  • Melt jaggery by adding water
  • Add wheat flour into melted jaggery and mix it in low flame until it become thick in consistency
  • Add cardamom powder, cashew and raisins into it. If needed you can add a tablespoon ghee also

Shark Curry | Special Sraavu Curry | Shark Curry with Coconut gravy | Thalassery Special Sraavu Curry 


Ingredients:- 

  • Shark- 300 gm
  • Turmeric – 1 Teaspoon
  • Chilli Powder – 2 ½ Teaspoon
  • Salt
  • Tomato – 1 big
  • Ginger – ½ Inch
  • Green Chilli – 3
  • Curry leaves
  • Tamarind water from 1 lemon size tamarind
  • Coconut – 1 ½ Cup
  • Cumin Seeds – ¼ Teaspoon
  • Mustard Seeds
  • Oil

Preparation:-

  • Marinate the fish with salt, turmeric powder and chilli powder
  • Cut and add Tomato, ginger, green chilli and curry leaves into the fish
  • Add Tamarind pulp and mix well
  • Add required amount of water and cook
  • Grind coconut and cumin seeds
  • Once the fish is cooked add coconut mixture into the curry and allow to boil
  • Splutter mustard seeds and add into curry

  • Cardamom - 3

Preparation:-

  • To a mixer add tender coconut pulp, sugar cardamom and tender coconut water and blend it well
  • Add Milk to it and blend it again
  • Tender coconut shake is ready to serve

Ingredients:-
  • Beetroot – ½ portion of medium size
  • Green chili – 5
  • Garlic – 2 Tablespoon
  • Ginger – 1 Tablespoon
  • Dates - 5 Nos. pasted
  • Coriander – 1 Teaspoon
  • Pepper whole – 1 Teaspoon
  • Cumin seeds – ½ Teaspoon
  • Fenugreek – ¼ Teaspoon
  • Turmeric Powder – 1 Teaspoon
  • Salt to taste
  • Gingerly Oil
  • Vinegar
  • Asafoetida a pinch
 

Preparation:-

  • Great beetroot
  • Heat a pan and sauté coriander, whole pepper, cumin seeds, fenugreek and crush it well
  • Heat oil in a pan and add green chilli, ginger, garlic and sauté well
  • Add grated beetroot and continue sautéing
  • Add salt to taste and turmeric and mix it well
  • Add pasted dates and mix it again
  • Add Asafoetida
  • Add filtered crushed spices and mix it well and then switch off the stove
  • Once it become cool pour required vinegar and mix it well
  • Tasty beetroot pickle is ready to serve.

Sweet Thukada is prepared using Maida and Rava. It is very easy to prepare and preserve it for couple of days. Sweet Thukada or this evening snack is coated with sugar and because of that kids enjoy eating this. Sweet Thukada is very easy to prepare. It can be used as Naalumani palaharam/evening snack.

Sweet Thukada | Evening Snack | Special Diwali Sweet

Ingredients:-

  • Maida- ½ Cup
  • Rava – 1 Tablespoon
  • Sugar -½ Cup
  • Powdered Sugar (Add 1 cardamom) – 1 Tablespoon
  • Baking Soda – A pinch
  • Salt – A Pinch
  • Ghee – 1 Teaspoon
  • Warm Milk – ¼ Cup
  • Oil

Preparation:-

  • Mix maida, rava, baking soda salt and powdered sugar
  • Add milk and make dough and rest it for half an hour
  • Make balls and roll out into thin chapathi shape
  • Cut it into desired shape
  • Fry both sides
  • Make a sugar syrup and dip the fried items into it
  • Tasty Thukada / Diwali Sweet is ready to serve

Ingredients:-

  • All-purpose Flour/Maida – 1 Cup
  • Baking Soda – 1/2 Teaspoon
  • Baking Powder – 1 Teaspoon
  • Orange juice – 5 Tablespoon
  • Cashew- 2 Tablespoon
  • Raisins – 2 Tablespoon
  • Dates – 2 Tablespoon
  • Tutti fruity- 3 Tablespoon
  • Sugar Powder – ½ Cup +¼ Cup
  • Cloves – 2
  • Cardamom – 2
  • Cinnamon- a small portion
  • Nutmeg – A small portion
  • Melted unsalted butter – ½ Cup
  • Egg – 2 in room temperature
  • Vanilla essence – 1 teaspoon 
  • Honey – 1 Tablespoon

Plum Cake Undakkunna Vidham

Preparation:- 

  • Soak cloves cashew, raisins, tutti frutti and dates in orange juice
  • Take a bowl and sieve all-purpose flour, add teaspoon baking powder, and teaspoon baking soda
  • Caramelize the sugar
  • Grind sugar with cloves, cinnamon, and cardamom
  • Blend powdered sugar, eggs, vanilla essence, honey and melted sugar
  • Add soaked dry fruits and mix well
  • Transfer All-purpose flour mixture little by little and mix it well 
  • Take a baking tin and apply butter on top of it. Transfer the cake mixture and tap it couple of times
  • Pre-heat the cooker for 10 min in medium flame
  • Keep the cake tin inside the cooker and bake for 1 hour
  • Tasty plum cake is ready to serve

  • Chilli Powder – 2 ¾ Teaspoon
  • Mustard seeds – 1 ¼ Teaspoon
  • Coconut Oil
  • Curry Leaves
  • Salt

Preparation:- 

  • Add Salt, turmeric, chilli powder into river fish and mix
  • Add ginger, green chilli and tomato and mix it again
  • Grind Coconut with ¾ portion of mustard seeds
  • Add tamarind pulp, curry leaves and then switch on the stove
  • Once it start boil add coconut paste and bring into boil
  • Splutter mustard seeds and add it into the curry
  • Tasty puzha meen Curry / River fish curry is ready to serve

Ingredients:-

  • Boiled egg – 3
  • Boiled Potato – 2
  • Gram flour or besan - ¾ Cup
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – ¾ Teaspoon
  • Garam Masala - ¼ Teaspoon
  • Cumin Seeds – ¼ Teaspoon
  • Curry Leaves
  • Salt 
  • Oil as needed

Preparation:-

  • Mash cooked potato
  • Add salt, turmeric powder, chilli powder, Curry leaves, garam masala and mix it well
  • Take Gram flour or besan into a vessel and add salt, turmeric powder, chilli powder, cumin seeds into it. 
  • Add water little by little and mix it well
  • Cover egg with potato mix
  • Dip the egg in Gram flour or besan mix and fry both sides
  • Tasty egg bonda is ready to serve
