Special Masala Egg Fry | Masala Mutta fry



Ingredients:-
  • Boiled Eggs -2
  • Shallot/Small Onion –6
  • Ginger- ½ Inch
  • Garlic -4 Pods
  • Dry Red Chilli -2
  • Turmeric Powder – ¼ Teaspoon
  • Coriander Powder – 1 Teaspoon
  • Pepper Powder -¼ Teaspoon
  • Vinegar -1 Teaspoon
  • Sugar -¼ Teaspoon
  • Coriander leaves as needed
  • Curry leaves as needed
  • Salt as needed
  • Oil as needed

 

Preparation:-
  • Hard boil and slice the eggs
  • Grind shallot, ginger, garlic, coriander leaves, salt, turmeric, coriander powder pepper powder and vinegar
  • Heat oil in a pan
  • Add curry leaves into it
  • Add ground paste into the pan and stir well by keeping the flame low
  • Add sugar after sometimes and stir well
  • Switch off the stove
  • Add egg and Coat it with the masala
  • Tasty masala egg fry is ready to serve

Kerala Special Omelette | Special Omelette Muffin | Egg Muffin



Ingredients:-
  • Egg – 4
  • Onion -Small sliced
  • Carrot Grated - Small
  • Coconut Grates – ¼ Cup
  • Coriander Leaves as required
  • Pepper Powder – ½ to ¾ Teaspoon
  • Salt as required

 

Preparation:-
  • Take eggs into a bowl and then add salt, pepper powder and mix it well
  • Add onion, carrot, coconut, coriander leaves into the egg and mix it well
  • Heat 9 or 12 cavity appam making vessel, apply oil and pour egg mix into each cavity
  • Flip it over to cook the other side
  • Tasty egg omelette muffin is ready to serve

Ingredients:-
  • Egg – 3
  • Besan/Gram flour – ½ Cup
  • Chili Powder – ½ Tsp
  • Garam Masala – A pinch
  • Cumin seeds – ¼ Tsp
  • Ginger garlic paste– ½ Tsp
  • Coriander leaves as required
  • Salt to taste
  • Oil as needed


Preparation:-
  • First let’s boil the egg
  • Once the egg is boiled, cut the eggs into four pieces
  • Take a bowl and add Besan flour, Salt, Chilli Powder, Ginger & Garlic Paste, Cumin Seeds and garam masala and mix well
  • Add ½ Tsp oil into it and mix.
  • Pour water little by little and mix it well till you get the correct consistency
  • Add coriander leaves and mix, batter is ready now
  • Heat a pan and pour required oil to do deep fry. Dip the egg one by one into the batter and fry it on both sides. Drain on paper towels.
  • Tasty “Egg Pakoda” is ready to serve

Ingredients:-

  • Roasted Rice Flour (Very Fine) – 1 Cup
  • Egg – 2
  • Onion– 1 medium, finely chopped
  • Ginger – ½ Tsp (Chopped)
  • Green chilli - 2
  • Fennel seeds -1 Tsp
  • Coriander Leaves as needed
  • Salt to taste

 

Preparation:-
  • Take a bowl, add rice flour and then mix the egg
  • Add required salt then mix it well
  • Pour water little by little (Around 1/4 Cup) and make the batter similar to Idili batter
  • Add chopped onion, green chilli, ginger, fennel seeds and coriander leaves into the batter and mix it well
  • Heat a pan by pouring required oil to do deep fry.
  • Pour a spoon full of batter into the hot oil and do deep fry on both sides
  • Tasty “Mutta surka” is ready to serve

Malabar Special Kaipola


Ingredients:-
  • Banana (Nenthra Pazham) – 1 Cut into small pieces
  • Sugar – 3 to 4 Tbsp
  • Egg - 2
  • Cardamom Powder – 6 Crushed
  • Cashew as needed
  • Raisins as needed
  • Ghee – 2 to 3 Tbsp


Preparation:-
  • Take a vessel and beat the eggs well by mixing the sugar
  • Heat a pan and add ghee into it. Add Cashew and then raisins and sauté well and transfer that into a vessel.
  • Add little more ghee into the same pan and add banana into it and fry it until light brown
  • Transfer the fried banana into the beaten egg and mix it well
  • Add cardamom powder into it 
  • Add little more ghee and transfer the egg and banana mix into it and then add cashew and raisins into the mixture and cook well for 10 to 15 min
  • Make sure you keep the flame low otherwise it may burn
  • Tasty kaipola is ready to serve

Ingredients:- 
  • Cooked Basmati Rice - 2 Cup uncooked rice
  • Onion – 1 Big
  • Carrot - ½ Cup
  • Beans - ½ Cup
  • Spring Onion – ½ to ¾ cup
  • Egg - 3
  • Soya Sause - 2 Tbsp
  • Salt to taste
  • Oil as needed
  • Pepper Powder


Preparation:- 
  • Cook the Basmati rice, it is better if you can cook the rice in advance. Add salt while cooking.
  • Heat a pan and oil into it, add sliced onion and sauté well.
  • Add Carrot and beans into the pan and saute, make sure to add required salt into the vegetable
  • Add egg into the vegetable mix and also add a little salt, ½ tsp pepper powder into it and mix well
  • Add cooked basmati rice into the pan and mix well
  • Add 2 Tbsp Soya Sauce, 1 Tsp pepper powder and spring onion into the rice and mix well
  • Serve it hot!

Kerala Style Egg Curry | Naadan Mutta Curry


Ingredients:- 
  • Egg – 2
  • Onion – 1 Medium
  • Potato – 1 Medium
  • Tomato – 1 Medium
  • Small Onion/Shallot – 4
  • Ginger – ¾ Inch
  • Garlic – 4 pods
  • Green Chilli – 2
  • Grated Coconut – ½ Cup
  • Turmeric Powder – ¼ Tsp
  • Chilli Powder – ¾ Tsp
  • Coriander Powder – 2 ½ Tsp
  • Pepper Powder – ¼ Tsp
  • Garam masala – ¼ Tsp
  • Curry Leave as required
  • Salt as required
  • Oil as required
  • Water as required

 

Preparation:-

  • Boil the eggs first and keep it aside. While boiling the water make sure to add a little salt into it to avoid breaking the egg shell
  • Take a cooker and add sliced onion, Potato, Tomato, sliced Green Chilli, Ginger, Garlic, Curry leaves, Turmeric Powder ¼ Tsp, Chilli Powder ¾ Tsp, Coriander Powder 2 ½ Tsp, salt and a little water to cook and boil for two whistle
  • Take a mixer jar and grind the coconut by adding a little water to make a smooth paste
  • Switch on the stove and then smash few potatoes and then
  • Add boiled eggs into it and allow it to boil
  • Pour the ground coconut paste into the cooker and mix well and boil again
  • Add ¼ Tsp pepper powder into the curry
  • And lastly add ¼ Tsp garam masala into to the curry and mix well. Switch off the stove
  • Heat a pan and add oil into it, splutter the mustard.
  • Add sliced shallot and curry leaves into it and sauté well
  • Transfer the mustard mixture into the curry
  • Serve it hot with Chappathi or Rice

Egg Vandaloo


Ingredients:-

 Boiled eggs       -5
Onions              -2
Dry red chilies   -4
Garlic                -5 flakes
Ginger               -1 piece
Cummin seeds   -½ tsp.
Cinnamon          -1 piece
Garam masala   -1 tsp.
Vinegar             -¾ cup
Sugar                -1 tbsp.
Ghee                 -2 tbsp.
Salt


Preparation:-
1. Add ghee in a pan and heat.Add Chopped onions and fry well.

2. Then add the paste made by Grinding the red chilies, garlic, ginger and
cummin seeds with a little vinegar.

3. Add Cinamon and salt and stir well.

4. Then add sugar and garam masala.

5. Cut eggs into halves, lengthwise and add to the curry.

6. Cook till we get a thick gravy.
