Rava Appam | Rava Naalumani Palaharam | Soft Rava Neyyappam | Rava Panji Appam

Ingredients:-

  • Semolina/Rava – ½ Cup
  • All-Purpose flour /maida– 1 Cup
  • Grated Jaggery – ½ Cup
  • Cardamom– 4 Pods Crushed
  • Salt a pinch
  • Water as needed
  • Oil as needed to fry

Preparation:-

  • Heat 1 cup water in a pan and melt jaggery
  • Take a bowl and add App-purpose flour/Maida, Rava, a pinch of salt, cardamom Powder and mix it well
  • Pour Jaggery syrup into the bowl and mix it well
  • Keep it aside for 30 min
  • After 30 min open the vessel and mix it well
  • Heat oil in a pan and pour a spoon full of batter and deep fry both sides 
  • Tasty Rava appam / Rava Naalumani Palaharam is ready to serve.

Chicken Curry can be prepared in different style. In Kerala one of the variety of chicken curry you may find in restaurants are “Mulakitta Chicken Curry”. This is prepared without sautéing Onion or any other ingredients. Also no chicken Masala is used to prepare this bachelors special chicken curry.  I have prepared this special Mulakitta chicken Curry in clay pot and it adds additional taste to your chicken curry. You will find a huge difference in the taste due to this special preparation. Please try from your side and provide the feedback.

Chicken Curry without Chicken Masala | Chicken curry in Clay Pot | Bachelors Chicken Curry

Ingredients:-

  • Chicken – 500 Gram
  • Onion - 1 Medium sliced
  • Tomato – 1 Medium Sliced
  • Green Chilli – 3 Small
  • Garlic – 10 Pods 
  • Ginger – 1 Inch
  • Curry leaves as needed
  • Turmeric Powder – ½ Teaspoon
  • Chilli Powder – 1 ½ Teaspoon
  • Lemon Juice – ½ portion squeezed
  • Salt to taste
  • Coconut Oil – 1 Tablespoon
  • Water – ½ Cup
  • Coriander Powder – 1 Tablespoon
  • Garam masala – 1 Teaspoon

Preparation:-

  • Take a clay pot and add chicken, onion, tomato, garlic, ginger, green chilli, curry leaves
  • Add salt to taste, turmeric powder, chilli powder, lemon juice, coconut oil and mix it well
  • Keep it aside for 30 minutes
  • Pour ½ cup water and mix it well
  • Once it starts boiling close the pot and keep the flame at medium
  • Add coriander powder, garam masala, curry leaves and cook well
  • Once it reaches the required gravy switch off the stove and pour a little raw coconut oil and close the pot
  • Tasty mulakitta chicken curry / Bachelors Chicken Curry is ready to serve.

Vellayappam/appam is one of the favorite breakfast in Kerala. If you visit any restaurants in Kerala you will find Vellayappam/appam as one of the breakfast item. Every home in a week on rotation vellayappam/appam is prepared as one day’s breakfast. This soft vellayappam/appam can be eaten with verities of curries like Kadala, Cherupayar, stew etc but famous curry to be used along with vellayappam is egg curry / mutta curry. Vellayappam can be prepared using rice, ragi, wheat etc. Here I am showing how to prepare vellayappam/appam using Rava or Semolina. Please watch the video and let us know your feedback as comment.



Rava Vellayappam | Rava/Semolina Appam | Rava Palappam


Ingredients:-

  • Soaked Rava/Semolina – 1 ½ Cup
  • Grated Coconut – ½ Cup
  • Yeast – ½ Teaspoon
  • Sugar – 1 tablespoon
  • Water – 1 Cup
  • Salt to taste

Preparation:-

  • Take a mixer jar and add soaked rava/Semolina, grated coconut, yeast, sugar, water and grind it well
  • Transfer the ground batter into a vessel and add salt on top of it. Keep it aside for 6 to 8 hours
  • After 8 hours take out the batter and stir it well
  • Heat a pan suitable to make appam (Appam Chatti) and pour a spoon full batter and spread it over. Close the vessel using lid for 2 to 3 min.
  • After 2 to 3 min take out the appam
  • Tasty Rava / Semolina Vellayappam is ready to serve

Here I am showing how to prepare Chammanthi or Chutney using gooseberry/Nellikka/Amla. To prepare this you just need 5 minutes. Gooseberry/Amla/Nellikka is vitamin C rich fruit and it helps to increase immunity power. Nellikka Chammanthy | Gooseberry Chutney | Amla Chutney

Ingredients:-

  • Onion – 1 Medium
  • Tomato – 2 Medium
  • Green chilli – 1
  • Roasted Gram/Pottukadala – ¼ Cup
  • Turmeric Powder – ¼ Tsp
  • Chilli Powder – ½ Teaspoon
  • Mustard Seeds- 1 Teaspoon
  • Curry leaves as needed
  • Water as needed
  • Oil as needed
  • Salt to taste

Preparation:-

  • Heat a pan and dry roast the Roasted Gram/Pottukadala
  • Heat oil in a pan and add onion, tomato, green Chilli, curry leaves and sauté well 
  • Add turmeric powder, chilli powder salt to taste and continue sautéing 
  • Grind roasted Gram / pottukadala, tomato onion mix by adding some water
  • Heat oil in a pan and splutter mustard seeds, add curry leaves and ground chutney into the pan and allow it to boil
  • Tasty Roasted Gram / Puttukadala Tomato Chutney is ready to serve with Dosa or Idly

Ingredients:-
  • Pasta- 1 Cup
  • Water – 4 Cup
  • Salt – 1 Teaspoon
  • Oil- 1 Teaspoon
  • Cornflour- 4 Table Spoon
  • Kashmiri Chilli Powder – 1 Teaspoon
  • Chilli Powder- ¼ Teaspoon
  • Dry mango Powder- 1 Teaspoon
  • Black salt – 1 Teaspoon

Preparation:-
  • Take water in a vessel and boil water by adding salt and oil. Once it starts boiling add pasta into it and cook well
  • Once Pasta is cooked drain the water
  • Pour cold water on top of the cooked pasta to make it separate
  • Transfer cooked pasta into a bowl and add corn flour on top of it and mix it well
  • Heat oil in a pan and deep fry pasta by turning it all the sides
  • Transfer fried pasta into a bowl and add kashmiri chilli powder, chilli powder, dry mango powder, Black salt and mix it well
  • Tasty and Crispy Fried pasta / Kurkure is ready to serve

Chemmeen Parippu Curry | Prawns Dal Curry | Malabar Style Chemmen Parippu Curry

Chemeen Parippu Curry

Ingredients:-

  • Prawns – 250 Gram
  • Drumstick - 1
  • Dal (soaked) - ¼ Cup
  • Onion – 1 Small
  • Green Chilli – 2
  • Ginger – ¼ Inch Crushed
  • Garlic – 5 Pods Crushed
  • Turmeric Powder – ½ Teaspoon
  • Red chilli powder – ¾ Tablespoon
  • Tomato – 1 Medium Size
  • Tamarind – Gooseberry size soaked in 3/4 Cup water
  • Salt to taste
  • Grated Coconut – ½ Cup
  • Cumin Seeds – ¼ Teaspoon
  • Water as required 
  • Mustard Seeds – ½ Teaspoon
  • Fenugreek – ¼ teaspoon
  • Curry Leaves as needed

Malabar Style Chemmeen Parippu Curry

Preparation:-

  • Take a cooker and cook soaked dal
  • Heat oil in a mud pot and sauté chopped onion by adding little salt
  • Add green chilli, ginger garlic and sauté well
  • Add turmeric powder, chilli powder and continue sautéing 
  • Add tomato and curry leaves and sauté
  • Add drumstick and cleaned prawns, ¾ Cup tamarind water and cook well by closing the pot
  •  Smash cooked dal and add it in the curry and mix it well
  • Take a mixer grinder, add coconut, a pinch of turmeric powder, cumin seeds and grind it well
  • Transfer the ground coconut into the curry, add required water for the curry and mix it well
  • Heat oil in a pan add splutter mustard seeds, add fenugreek, curry leaves into it and then transfer it into curry
  • Tasty Chemmeen parippu curry is ready to serve

Semiya Uppumavu | Vermicelli Upma | Breakfast Upma

Ingredients:-

  • Vermicelli - 2 Cup
  • Mustard Seeds – ½ Teaspoon
  • Dry red chilli – 2
  • Curry leaves as required
  • Urad dal – ½ Teaspoon
  • Chana dal – 1 Teaspoon
  • Peanut 1- 1 Tablespoon
  • Ginger- ¼ Teaspoon chopped
  • Onion – 1 small chopped
  • Carrot – ¼ cup chopped
  • Beans- ¼ Cup chopped
  • Lemon juice- ¼ Teaspoon
  • Salt to taste
  • Coriander leaves

 

Preparation:-

  • Boil water in a vessel with required salt and then add vermicelli and cook for 2 min
  • Drain the water
  • Heat oil in a pan, splutter mustard seeds. Add dried red chilli, Curry leaves, Urad dal, Chana dal, peanuts and sauté well
  • Add chopped ginger and sauté again
  • Add onion, carrot, beans and required salt and cook well for 2 min by closing the pan
  • Transfer cooked vermicelli and add some ghee into it and mix it well
  • Add coriander leaves and lemon juice into it and mix it well
  • Tasty Vermicilli Upma is ready to serve

Ingredients:-

  • All-purpose flour – 1 Cup
  • Sugar -1 Tablespoon
  • Baking Powder – ½ Teaspoon
  • Salt a pinch
  • Milk – ¾ Cup
  • Warm Water as required
  • Oil as needed to fry

For Fillings

  • Cashew nuts as needed
  • Raisins as needed
  • Pistachio as needed

For Sugar Syrup

  • Sugar – ½ Cup
  • Water – ¼ Cup

 

Preparation:-

  • Take a bowl and mix all-purpose flour, sugar, baking powder and salt
  • Pour milk and then water little by little and mix it well until it reaches the required consistency
  • Close the vessel and keep it aside for 30 to 60 min
  • After 30 min open the vessel and mix it well
  • Heat a non-Stick Tawa and pour ¼ cup batter and make pan cake
  • Take a small bowl and add cashew nuts, raisins, pistachio, sugar, butter and mix it well
  • Take a pancake and add small portion of fillings and then close it by pressing it on the corner
  • Heat a pan and pour ¼ cup water and then ½ cup sugar and make thick syrup
  • Heat oil in a pan and deep fry each pan cake
  • Dip the fried pan cake into the sugar syrup
  • Tasty Qatayef, Arabic Sweet/Dessert is ready to serve

How to prepare Chicken Vada | Iftar Nombuthura Special Chicken Vada | Malabar Special Chicken Vada

Chicken Pakoda

Ingredients:-

  • Chicken – 7 Pieces
  • Onion -1
  • Ginger – 1 Inch
  • Curry leaves
  • Turmeric Powder – ½ Tsp
  • Chilli Powder – 1 Tsp
  • Cumin Seeds – ¼ Tsp
  • Gram flour – 6 Table Spoon
  • Salt to taste
  • Oil as needed

 Chicken Vada

 Preparation:-

  • Take a cooker add chicken, salt to taste, ¼ teaspoon pepper powder and cook the chicken
  • Cut onion, ginger
  • Shred the cooked chicken
  • Take a bowl and add shredded chicken, onion, ginger, curry leaves, salt to taste, gram flour, Turmeric Powder, Chilli powder, cumin seeds (If required add water ) and mix it well
  • Add gram flour little by little and water as required to get the required consistency to make vada shape
  • Shape the mixture to make chicken vada
  • Heat oil in a pan and deep fry the vada both sides
  • Tasty chicken vada is ready to serve.
