Pappaya Thoran | Raw Pappaya Stir Fry



Ingredients:-
  • Papaya – ½ portion of medium size
  • Grated coconut – ½ Cup
  • Shallot/Small Onion – 4 to 5
  • Green Chilli – 2
  • Turmeric - 1 Pinch for color
  • Salt to taste
  • Water – 1 Tbsp
  • Oil as needed

 

Preparation:-
  • First clean the papaya. Peel off the skin and cut into pieces to remove the centre portion
  • Grate the papaya
  • Take a mixer jar and crush the coconut, shallot and green chilli
  • Heat a pan and splutter the mustard
  • Transfer the grated papaya, crushed coconut, salt and a pinch of turmeric powder into the pan and mix well
  • Pour 1 Tbsp water and cook well by closing it using a lid
  • Add curry leaves and switch off the stove. Papaya thoran is ready to serve

Vazha Koombu Thoran | Banana Flower Stir Fry

How to prepare Kerala Special Vazha Koombu Thoran/Banana Flower Stir Fry?



 Vazhakoombu Thoran | Banana Flower Stir Fry



Ingredients:-
  • Vazha Koombu/Banana Flower – 1 finely chopped
  • Turmeric Powder – ¾ Tsp
  • Chili powder –1 Tsp
  • Green chilli - 1
  • Curry leaves as needed
  • Boiled rice – 2 Tsp
  • Urad dhal – 1 Tsp
  • Mustard seeds as needed
  • Dried red chilli – 2
  • Grated Coconut – 1/2 Cup
  • Salt to taste
  • Oil as needed




Preparation:- 
  • First clean vazha koombu / Banana Flower and then cut it into fine and small pieces
  • Transfer the chopped vazha koombu / Banana Flower into a big vessel and then add green chilli cut it into slices, salt to taste, turmeric powder, chilli powder, curry leaves, grated coconut and then mix it well
  • Heat a pan and add oil into it. Splutter the mustard seeds and then add boiled rice, urad dhal, dried red chilli and sauté well
  • Transfer the clean vazha koombu / Banana Flower into the pan and mix it well
  • Pour the required water to cook the vazha koombu / Banana Flower
  • Close the lid and cook for approximately 10 to 15 min in medium flame
  • Tasty vazha koombu / Banana Flower stir fry is ready to serve
  • Switch off the stove

Idichakka Thoran | Tender Jack fruit Stir Fry

How to prepare Idichakka thoran/Tender Jack fruit Stir Fry?


 Idichakka Thoran | Raw Jack fruit Stir Fry



Ingredients:-
  • Jack Fruit/Idichakka – ½ portion of a medium size fruit
  • Turmeric Powder - ½ tsp
  • Grate Coconut – ½ cup
  • Green chilli – 3
  • Garlic – 3 to 4 pods
  • Boiled rice – 1 Tsp
  • Urad dal – 1 Tsp
  • Dried red chilli - 2
  • Salt to taste
  • Mustard Seeds as needed
  • Curry leaves as needed
  • Water as needed to cook the Jack Fruit/Idichakka

 

Preparation:-

  • While cutting the Jack fruit make sure to apply oil on your hand and knife to avoid sticking the white paste
  • Remove the sharp portion of the jack fruit using a knife
  • Cut the Jack fruit into medium sized pieces
  • Transfer the cut pieces into a cooker. Add salt to taste, ½ tsp turmeric Powder and a little water to cook the jack fruit
  • Using a mixer jar crush the cooked idichakka. Make sure you pulse it for once or twice to avoid it become a paste
  • Crush the coconut using a mixer by adding green chilli and garlic
  • Heat a pan and add oil into it, splutter the mustard seeds.
  • Add boiled rice and urad dal into the oil. After that add curry leaves and dried red chilli into it sauté well
  • Transfer the crushed idichakka/Jack fruit into the pan and mix well
  • Add crushed coconut into it and mix well
  • Taste the salt and add if required
  • Mix the mixture well
  • Cook for 2 min by closing the mixture using a lid
  • Open the lid and mix it well. Switch off the stove and transfer it into a serving dish
  • Serve it hot!

Ingredients:-

  • Grated Carrot – 1 Big Size
  • Shallot/Small Onion – 3
  • Green Chilli – 2
  • Turmeric – ¼  Tsp
  • Grated Coconut – 2 Tbsp
  • Mustard seeds as required
  • Curry leaves as needed
  • Oil as needed
  • Salt as required


Preparation:-
  • Take grated carrot into a vessel and add salt, sliced green chilli and mix well
  • Add curry leaves into it
  • Take a pan and heat the oil. Splutter mustard seeds and add shallot/Small onion and sauté well
  • Add grated carrot in to it and sauté well for some time, close the lid and cook. Make sure to open the lid and stir the carrot in between.
  • Add grated coconut and curry leaves into the carrot and mix well
  • Serve it hot

Spring Onion Stir Fry / Ulli Thandu Thoran



Ingredients:-

Spring Onion/ Ulli Thandu – 2 ½ Cup
Turmeric Powder - ½ Tsp
Coconut – ½ Cup
Green Chilli – 2
Small Onion/Shallot – 2 Pods
Garlic – 2 pods
Curry leaves as needed
Salt as needed
Mustard seeds
Oil as needed

 
Preparation:-

  • Take a pan, pour a little oil into it and splutter the mustard seeds
  • Add Spring onion into the pan and mix well
  • Add Salt and turmeric Powder and stir well
  • No need to add water separately.
  • Close the lid and boil the spring onion in low flame till its’ water gets evaporates
  • Take a mixer jar and add coconut, garlic, Small Onion/shallot, green chilli and crush
  • Add crushed coconut into the spring onion and mix well
  • Once again close the lid and boil the spring onion in low flame
  • Add curry leaves
  • Switch off the stove once all the water evaporates
  • Server it hot with Rice or Chapathi!

Pavakka Thoran/ Kaippakka Thoran/ Bitter Gourd Stir Fry




Ingredients:-

Bitter Gourd - 1(Chopped)
Onion - 1
Tomato - 1
Green Chilli -1
Curry Leaves
Chilli Powder - 1/2 Tsp
Turmeric Powder - 1/2 Tsp
Grated Coconut - 3 Tbls
Salt - As required
Mustard seeds - 1/2 Tsp
Cumin Seeds - 1/4
Oil - As required
Water - 1/4 cup
Tamarind Water (Optional)



 Preparation:-

1. Soak chopped bitter gourd in tamarind water for around 15 min (Optional)
2. Heat a pan
3. Pour oil
4. Once the oil became hot add mustard seeds
5. Once the mustard seeds splitter add cumin seeds
6. Add onion and sauté well
7. Add green chilli and tomato into it and sauté for 2 min
8. Next add chopped bitter gourd and sauté for a minute
9. Add salt, turmeric and red chilli powder and mix well
10. Pour water and cook in high flame. Once the water started boiling reduce the flame to low. Close the lid and cook
11 Stir it occasionally. After 5 min , the bitter gourd will be cooked.
12. Add coconut, curry leaves and mix well. Close the lid and again cook for 1 min
13 Serve with rice

Pachakaya Thoran/ Raw banana stir fry/ Plantain Stir Fry

                                                         


Ingredients:-

Raw Banana                   - 1
Coconut                          - one handful
Turmeric                        -3/4 Tsp
Dry red chilli (Crushed)- 1 ½ Tbls
Coconut oil                    -1 Tsp
Salt
Curry leaves

Method:-

1. Cut the raw banana into 4 pieces.
2. Add salt and turmeric into it. Add some water and pressure cook it.
3. Once it cooked add crushed red chilli and curry leaves and grated coconut and mix well.
4. Last add coconut oil and mix well
5. Serve with Rice

Beetroot Thoran/ Beetroot Stir Fry/ Beetroot Upperi



Ingredients:-

Beetroot            - 1 Big
Green Chilli        - 3 No.s
Coconut Grated - ¼ Cup
Garlic                  - 5 Pods
Mustard seeds   - ¾ Tsp
Turmeric            -1/2 Tsp
Salt                        -As Required
Oil                         - As required
Curry Leaves       - 1 spring

Method:-

1. Grate the beetroot
2. Crush the coconut, garlic and green chilli.
3. Take a bowl. Add grated beetroot, crushed coconut and curry leaves, salt and turmeric. Mix well
4. Pour some oil in the kadai and heat well.
5. Add mustard seeds into it.
6. Once the mustard seeds start spluttering add beetroot mixture and sauté well.
7. Closed with a lid. Cook on low flame stirring occasionally, until the beetroots are completely cooked and soft.
8. Serve with rice.

Potato Long Beans Stir Fry ( Urulakizhangu Achinga Payar Mezhukupuratti)


Ingredients:-

Potato             - 2
Long Beans    - 1 Cup (cut it into 3/4 inch)
Turmeric        - 1/2 Tsp
Chilli Powder - 1 Tblp
Salt
Curry Leaves
Oil


Preparation:-


  • Boil potato and cut it into lengthwise.
  • Heat a pan and add oil into it.
  • Add curry leaves.
  • Add Long Beans into the pan and saute for 2 to 3 minutes.
  • Add cooked potato into it.
  • Add salt,turmeric powder and chilli powder saute well.
  • Cover the pan for 3 minutes. Stir occasionally.
  • Serve it with rice

Potato Okra Fry( Vendakka urulakizhang Mezhukkupuratti)























Ingredients
Okra – 100 gms
Potato – 2 Medium
Onion – 1(Chopped)
Green chilli –2
Turmeric powder  - 1/2 Tsp
salt
Oil

Preparation
  • Wash and cut the okra into 11/2" long pieces and slit it into 4 .
  • Cut the potato in the same way and length(Thin slices).
  • Heat oil in a pan over medium heat.
  • Add onion and saute for 2 min.
  • Then add Potato and saute well and cook for 2 – 3 min.
  • Finally add the okra. Add salt and stir well.
  • Stir it occasionally until potatoes are cooked.
  • Serve it with Rice.
NB:- Better not to cover the pan while cooking Okra since it will become soggy.

Green Beans Thoran (Green Beans With Coconut)



Ingredients
Green Beans   - 1 Cup (Finely chopped)
Onion (small)  -    1
Green Chilli  - 1
Shallot  - 2
Garlic  - 3 Ccloves(Sliced)
Coconut – 1/4 Cup (Greated)
Turmeric powder  -  1/4 Tsp
Curry leaves
Salt
Mustard seeds
Oil


Preparation

  • Crush the Coconut with the Shallot and keep it aside.
  • Heat oil in a pan. Add mustard seeds. Let it splutter.
  • Then add Onion and stir well until the onion turns its colour.
  • Add Garlic and curry leaves and sauté well.
  • Then add the Beans, turmeric powder and Salt.
  • Add the crushed coconut  and mix well.
  • Sprinkle some water and closed with a lid.
  • Let it cook on low flame. stir it occasionally.
  • It will be cooked after 10 min.
  • Serve it with Rice.

Simple cabbage thoran





Ingredients
Cabbage   - 1 cup(finely chopped)
Onion       -1
Ginger     - 1 tbsp(chopped)
Turmeric powder - 1/4 tsp
Coconut -  2 tbsp
oil
mustard seeds
curry leaves

Preparation 

  • Mix cabbage,salt ,green chili,ginger and turmeric together.
  • Heat oil in a pan and allow mustard seeds to splutter.
  • Add onion into it and saute for few second.
  • Add the cabbage into it and mix well. 
  • Sprinkle a very little water into it.
  • Cover the pan and cook on low fame for 5 min.
  • Add the grated coconut and Curry leaves into it and mix .
  • Cook it for another 5 minutes.
